Mr Hyde , I’ve got a7.5 gal stainless steel conical fermentation tank . can I use it for my secondary fermentation. ? And it would have to be filled to the top ? Might not have been my best purchase, I wanted high quality equipment.any advice would be great

Hello, I 've seen some guys doing wine in italian way, they just press the grapes and they do not add anything to it like sugar, water or yeast , and leaving it to fermentation for a week. how can they make it this way ?

I just started the primary fermentation process using 4 gallons of white grape juice from my own grapes. How long do I allow before I rack to the carbon for secondary? Usually make beer, so this is a first for me. Thanks!

It depends on the specific gravity you began with and the SG you are trying to achieve. If you are going by a recipe, use the SG it recommends. When the primary SG reaches the recommended level, rack the wine to the secondary carboy.

Thanks for the guidance . I thought oxygen was needed for primary fermentation so that the primary fermenter was to be covered with a cloth and sealed by a rubber band. Secondary fermentation uses the air lock to keep the oxygen out thereafter. Is it ok to keep oxygen out entirely, except for the initial oxygen in the mixture, during primary fermentation?

Yes, in fact, I always start my primary fermentation in a plastic bucket with a gasket sealed cover and a bung to keep the air out as much as possible. There are plenty of opportunities for oxygen to come in contact with your wine. Keep as much of it out as you reasonably can during the entire process.

Yes, in fact it is recommended. I used a plastic bucket and a gasket sealed cover in my primary fermentation. Keep as much air out of your wine as possible, within reason. It will be exposed to air during the total process many times.

The issue is the specific gravity you are trying to achieve in your primary fermentation. Usually, the SG is between 1.07 and 1.10 at the beginning. Achieve this by putting juice in the primary fermenting bucket, perhaps a gallon, test the SG then pour in a gallon of water and then, after stirring, test the SG with your hydrometer. This will show you how much a gallon of water will reduce the SG. Then add more water to achieve the desired 1.07 - 1.10 SG. Another recommendation is to find a recipe for the type of grape you are using. The internet can be a great place for this type of information from people who have started with your type of grape. When the specific gravity is where you need it to be for the wine you are making. Measure it with your hydrometer.

Easy Clean. Or any cleaner recommended by a wine supply store would probably fine. The other solution is metabisulfate.
