I’m trying to make a healthy mindset shift but it’s slow going. You have a few recipes that include cocoa powder or chocolate and I try stay away from both due to the reflux/esophagitis. I actually needed an emergency endoscopy to remove food Nov last year. I know PPIs are necessary at times. I am also aware they interfere with absorption of some nutrients. Thanks you. I quit sugar 4 years ago by going 68 days without any sugar! The first 3 wks was challenging but I pushed through and the rest was easy. I was shocked at how much better all my organs worked and just amazed at how my skin glowed. I was never over weight but sugar destroys so much of life. I admit 2 years later I made one mistake and ate a slice of coconut pie and just like that I was hooked again. Sugar is addiction. I am now free and I will stay free! It's never worth it

Having developed pre-diabetes, I switched to Monk fruit sweetener in my morning coffee. I don't find it makes me hungry. I love fruit, especially cherries and berries. I try to balance my carbs and protein any time I eat. 35g carbs and 20g protein, along with up to 15g healthy fats, seems to keep my glucose from spiking. I am confused because you said the greener banana has more resistant starch and won't spike your blood sugar. I am a type 1 diabetic with a continuous glucose monitor and eating a banana will spike my blood sugar just as badly as if I ate pure table sugar. It is true the greener banana will spike it less than a ripe banana because of the resistant starch, but it still spikes it really high, so I can't eat bananas, green or ripe. Since there is very little fiber in a banana, once it spikes my blood sugar it stays elevated for a very long time. The only fruits I can really eat as a type 1 diabetic that don't drastically spike my blood sugar are berries: strawberries, blueberries, raspberries, etc.

Except I ate a little candy once a week and I drank nestle quik made with mostly water and just a little milk once a day. But that was it. I also couldn’t eat nuts or seeds. And I had a ton of cavities. Other notes- they found out that cavities are caused by a bacteria and I was in some special trial to kill that bacteria with some kind of tooth coating. Didn’t work. My brother ate the same diet except he also ate cake and pizza, Oreos and Kraft dinner. He had no cavities. Each of us has the teeth of one half of our family. The people with small yellow crooked teeth get no or few cavities. The people with big white straight teeth get tons of cavities. So, I’ve concluded that it’s largely genetic.

Fruit may be "natural" as long as it is unprocessed, but it is still loaded with sugar as any other fruit. I don't think bananas are a good choice at all, if you want to eat "less sugar", unless you only have a few slices. A FEW. Blueberries would be a better choice because the skin has useful nutrients in it. And fruit is not a good choice because half of the sugar is fructose. Bananas don't have all that much fiber anyway. Just don't snack, and soon you will not desire snacking! Remember, you can look "fit and trim", but still have Type 2 diabetes. I've read the stories of athletes such as swimmers and cyclists, (so they are regularly exercising!) and they STILL get Type 2 diabetes! So exercise and and eating "less sugar", isn't the complete or even correct answer. Dropping oils are also important. Use realm animal fats instead.

Probably a silly question, but can you cut the bananas in pieces and then freeze them?

Runners and marathoners are big on pre-run bananas. I once read about a tech CEO marathoner whose diet was essentially made up of dozens of bananas daily. 😳
