Another excellent video. My wife and I are both retired nurses. We now are full-time RV travelers in our vintage Airstream. Our kitchen is much like a boat galley so storage is limited. One of my favorite gadgets is my Ninja Foodi combo air fryer and pressure cooker. I can cook pretty much anything in this one device. I'm going shopping today for a spoonula and zester day. :)

Hi Texas Dave… I just tried to reply and I don’t think it went through…but this is so so funny. What a coincidence because George and I had an Airstream too that we dragged back and forth across the US and LOVED it all the while. My sister has restored 4 vintage Airstreams so it must be in our blood. It sounds like your Ninja combo machine is just the trick for that space…brilliant! Hi Paula - I’m sorry to say that this little processor doesn’t seem to be available in the US. I’ve tried and tried to locate something similar but no luck. I suppose I should stop using it because I get asked about it all the time! Plus, it was only 18e at the grocery store…so sorry! Cheers, Caroline

I know it’s a bit expensive but honestly it’s the best sharpener I’ve found ever… and I’ve tried lots all in pursuit of a nice sharp knife. And I feel like I finally found one I can rely on so it’s worth it to me.

Great video! I have to admit I’m a bit of a knife junkie, but the heart wants what the heart wants! Love your channel, you’re a delight to watch. I’d love to see more brunch ideas as it’s my favorite way to entertain.

You are so right, Mom! I tried to limit it to the bare essentials so that people wouldn't think there were too many obstacles to getting going in the kitchen but I agree wholeheartedly...kitchen shears are a must! I was gifted a good pair from one of my sisters a few years ago and I use them pretty much every day too! Thanks for bringing this idea to everyone's attention! Cheers, Caroline

Do you have some great tip what to use in place of tomatoes and purée tomato 🍅in all Mediterranean recipes?

My best suggestion would be red bell peppers, fresh or roasted. But I think would definitely be a challenge to swap them in all Mediterranean cooking. If acid is the problem, you might try to source or grow low-acid tomatoes and if seeds are the problem, try cutting the tomato in half and squuezing the seeds out of fresh ones or strain. Hi Green Lady! So funny you should mention an RV…George and I used to. travel in an Airstream and I had one pot…a cast-iron wok with lid…and I did everything (except cookies) in it! I bet you have great ideas about scaling down too. Cheers, Caroline

Well, for sure prices have gone up since I bought mine (if memory serves, it was still expensive at the time but less than $200). But I would also say, it was a lifetime purchase for me and one of the handful of things I brought along from the US to Spain when we moved here (and literally, we sold or gave away everything we owned except for what would fit in 4 small boxes). The only kitchen things I brought were a couple of knives and the board. That said, I also bought another board while living here in Spain from Zwilling to use at the farm that is almost just as good in my opinion and here it cost 65 euros (or about 75 dollars). Not sure worldwide pricing but it was a 60cm x 40cm wooden Zwilling and I would recommend it too. I hope this background information helps. What's most important is that the board is sturdy, heavy enough not to move around and gentle on your knives. There are many many options that people swear by so wooden is not the only way to go, just my way. Cheers, Caroline

Hi Jane, so nice to hear from you. Those pan holders are made by Le Creuset so they were a bit pricey, but if I have two pans going, I found a set from one of my pans from Spain that works almost as well. I do like the exact fit though and it’s especially important if I am pulling something from the oven so I guess, all in all, they are worth it! Cheers, Caroline

Hello Caroline! Awesome video! I have almost everything except the brassier, the grill pan and the knife sharpener. I definitely need those. I do have a nice big cast iron ceramic Dutch oven that’s a beautiful shade of blue…a gift from my husband. I just wish I had your talent to put all of the delicious Mediterranean ingredients together without always having to follow a recipe! Thanks for all the info!

@@kathlynsteinman3599 Funny enough, I may have more than a few years on you but when we moved to Spain a few years ago, we got rid of EVERYTHING we owned, including way too many things in the kitchen and we moved with nothing except for a few boxes. So, it gave me a chance to buy smarter, choose less and feel a lot lighter!

You don’t need a lot of junk to cook Mediterranean diet. The simplest the better. Millions of poor people in Mediterranean area cook and eat every day, and many have very basic kitchen and very few utensils. Just get a lot of fresh veggies and fruits every day if possible, good olive oil and some rice and pasta if needled.

You're right to remind everyone of that fruits and veggies are the essential bits for success! @@Avagardner2608 The first year we were here for 7 months, we rented an apartment that was outfitted with one pot (kind of like a small wok with a lid), one knife and we made it work because we weren't planning on staying or returning. Now that we are settled and have the means, I've bought things that I don't consider "junk" but that make my personal life easier, but they are not essentials, as you suggest. Fruits and veggies are!

Such good information. Great tools. Someday hope to get that cutting board, quite the investment. I have the Dutch oven. Would very much like a brazier. My color of choice is the blue. I made 2 of the pesto's from previous video. So yummy and I did roast garlic in the air fryer with great success. Now how to use up all that garlic paste. Thank Caroline for another great video!

HI Kathleen! Thanks for joining in the chat. Two things: I did find a much less expensive board on Amazon from Zwilling (the knife manufacturer) that I use at the farmhouse that is the same big size just not quite as deep but very very serviceable. And the roasted garlic paste...I freeze it in small containers and it lasts really really long (maybe 6 months) because I discovered a little container last week in there I forgot about and it was just as fresh as new after I defrosted it. My ceramic cast iron always stains, and I can never keep it clean. How do you keep yours looking brand new?

Great question and I have THE answer! Bar Keeper’s Friend keeps it looking like new. I tried the Le Creuset brand first but it was much more expensive and not nearly as effective. I use the cream lightly almost every time I cook in these pans and they really are like brand new every time. Cheers, Caroline
