I highly recommend getting a 6m so you can use it in lighter winds. I'm 6'3", 83kg (183pounds).
Jumping off the dunes we had about 20 knots. (Start small and never tilt the wing forward or land on the flat beach, always on a sandy slope.)
Foiling in about 15 knots.
Skating in about 12 knots.
You can actually use a normal skateboard (longboard) on a hard beach at low tide in about 15+ knots. In that case the wheels, which are smaller than those on a mountainboard, have the benefit of slowing you down a bit so it doesn't get too crazy. Plus I prefer to not be strapped in.
