Instead of the Applesauce I used extra bananas (4 in total) my son's absolutely raved on these and they usually don't like when I use oat flour. I added a bit of cornstarch due to additional liquid from my bananas. Great recipe and came just in time as I needed to use the bananas and egg whites I had.

Do you have a food processor? Remove core & skin and mash that apple to puree. What about Greek yogurt. Yogurt is not as sweet as applesauce. Taste it. Add more maple syrup. Just thoughts.

@barbaracohen2856 Sorry for popping in, but I am a baker and I can tell you flax egg will work, but muffin won't rise as high, if that matters to you. Not sure what you mean by blended apple. If you mean cooked apple, yes, it would work.

@@barbaracohen2856 Yes, but there are other choices. Google "egg replacement". *a tsp baking soda with 1TBSP vinegar mixed together then add---that is one possibility. Yes, I think cacao nibs would work, if they are not too bitter. I do not like them in baking...but you might. You might want to add a tich more maple syrup. Or use carob chips.

I made the healthy version with 265g mashed banana and 40g honey as I didn't have applesauce and maple syrup on hand. Each of my 12 mini muffins weighs around 56g (116kcal). Both texture and flavor are perfect for me, very moist and even sweet enough as a dessert. As this does not contain any oil/butter, instead of just slightly greasing the pan which almost caused a disaster, I would definitely either have it heavily greased or lined with nonstick cases next time.

Sure, that would be just fine, I wanted to make as low in calories as I could without sacrificing the taste. They're not fudgy and gooey inside because of the lack of chocolate chips, I used just 1/4 cup, but these are actually not dry in the inside.

Two tablespoons flax in one tablespoon water. Wait ten minutes. That equals one egg. You can't replace four egg yolks with only one egg but yogurt might work and you can add more baking power/soda to replace another of the eggs.

But you don't have to use any banana at all. It's only for sweetness. You could go back to the sugar, or use dates that have been softened or add more maple syrup or use brown sugar (better taste, just as bad a blood sugar spike).

Yes, it's true, classic ones ook better, but that the case with all the other food, but the taste and nutrition is what counts for me. Yes, I can understand that you don't love banana in your baked goods, my kids either, but have to say they ate those muffins, not really strong on banana flavor.
