I share with you a hack I learnt from a Korean eomeonim on how to secure a gimbap tightly and neatly without it bursting open. I've been rolling gimbap without a bamboo mat since day 1 because high humidity makes wooden mats easily moldy. I do not like the idea of using a moldy mat to roll gimbap (no matter how well I washed the mold off).
The best tools is your hands. As long as you wash it well, it's better than a mat as it allows you to be more precise. Michelin star chefs use bare hands to plate your dish, so there's nothing wrong rolling gimbal with clean hands.
In this video, I demonstrate rolling gimbap with rice layered up to 2/3 of the nori sheet.
I also demonstrate rolling gimbap with rice layered up to 100% of the nori sheet.
