I followed this video recipe, using almost every ingredient except for the dark soy sauce, which I skipped without substitution. Instead of Golden Mountain Sauce and Fish Sauce, I used chicken bouillon. Surprisingly, the dish turned out absolutely delicious, even better than any Thai restaurant I've ever tried. I never thought I could cook so well! Thanks so much for this life-changing video! For Canadians interested in making this dish, all the ingredients can be found at Food Basics. They didn't have white pepper, which is supposed to be better than black pepper (which I used). Instacart delivered my stuff in no time, and the only other thing they couldn't find was Mirin, but I managed to locate it at my local store.

I went to Chinese for Christmas because my Mom passed away two weeks prior and I just didn’t feel like doing anything special. But she LOVED Chinese food so I was honoring her anyway by going out rather than being sad alone at home. But I ordered this dish and I was sadly disappointed. The chicken was battered and tasted like it was deep fried in bacon grease. And all it had in it was cashews and celery. That’s it. I’ll make my own these way.

Fun Fact: Cashew Chicken was Invented first in Springfield, Missouri by Chef Leong in 1963. It’s a U.S. made dish. I’ve had it a ton there, and every other iteration of it at other places? Even overseas? They Do Not compare to Chef Leong’s Springfield’s recipe.

I made this tonight. Not 15 min (for me) but I like to take my time. :) I didn't have ginger root, so I used 3/4 tsp ground ginger. I forgot to use the garlic. I didn't have any dark soy sauce, so I just subbed in more regular soy sauce. The marinade I followed exactly. For the veggies, I didn't use red pepper, but added zucchini, carrots, and celery. My cashews were already salted, but I did cook them like you showed. I doubled the amount of sauce. It turned out wonderful! My husband gave it an A+

The first cashew chicken I had and ordered many times growing up had a clear sauce..I loved it. I more recently ordered from a local restaurant and it was similar to yours with a brown sauce, it was good but I think I prefer the clear chicken style broth/sauce.
