Today I'll show you what I do at the end of the day during this period. My night routine always starts with Tom Tom, but not every day is exactly the same. Although, as I imagine for most of us, I find myself doing certain activities almost every evening.
Poke
Ingredients
rice 1 cup
1/2 carrot
1/2 courgette
tempeh
peas a cup
1 tablespoon tahini
1 teaspoon soy sauce
juice of 1/2 lemon
1/2 avocado
sunflower seeds
peanut oil
Method
Boil the rice.
Cut the carrot and courgette into julienne strips. Boil the tempeh and peas in boiling salted water. Add the peanut oil to a pan and cook the courgette and the previously boiled tempeh and peas.
Mix 1-2 tablespoons of tahini, 1 tablespoon of soy sauce, a few tablespoons of water to obtain a smoother cream.
Assemble the poke in a bowl by placing the rice at the base, on top the carrot, the courgette, the peas, the tempeh, 1/2 avocado and the tahini sauce. Season again with the juice of 1/2 lemon and sunflower seeds.
Pumpkin and bean minestrone.
Ingredients
Boiled beans
pumpkin
onion
extra virgin olive oil
tomato sauce
turmeric
black pepper
paprika
Method
Boil dried beans or use already cooked ones.
Finely chop 1 onion and fry it in extra virgin olive oil. Cut 1/2 pumpkin into cubes and add it to the onion. Add the beans, water to taste and 2-3 tablespoons of tomato puree. Let it go and add the spices (turmeric, black pepper and paprika). When the pumpkin is ready you can partially blend the soup. Season it with a drizzle of raw extra virgin olive oil before eating.
Breakfast
Ingredients
3-4 tablespoons of oats
1 teaspoon of cocoa
2 teaspoons and chia seeds
1/2 tablespoon honey
2 teaspoons peanut butter
vegetable milk until covered
Method
Mix all the ingredients and leave in the fridge for 1 night.
Savory pancake
Ingredients
1/2 carrot
1/3 of courgette
pumpkin
1 spring onion
broccoli
3 tablespoons type 1 flour
1-2 teaspoons of potato starch
sparkling water
sale
peanut oil
Method
Cut all the vegetables into strips. Oil a pan with peanut oil and cook the vegetables. Season iti with salt. In the meantime, prepare a batter by mixing the type 1 flour, potato starch and sparkling water to taste. When the vegetables are cooked, add them to the batter. Mix well and cook again for about 3 minutes per side in a pan.
