Grandmother made this when I was a little girl. I remember she used apricot baby food for the nectar. Thank you for posting this. My aunts and I were saying how much we missed it and no one could remember the recipe.

Your are so kind Ms. Phyllis and probably helped so many young women at home start to be home makers. I thank you for that. OMG, been making this for years. My husband Aunt from Mound, Louisiana gave it to me over 20 yrs ago. I make it for funeral. As I usually as i always have it on had. I never knew about the Apricot Nector. Great going to try this. Now once it baked i put holes in top with a big meat fork and put fresh lemon juice to soak in. Also you can put your Lemon in microwave to get more juicey.. Your recipe looks great. It reminds me of an old recipe my mother-in-law used to make: 1 box cake mix (any flavor); 1 box instant pudding (any flavor-4 servings size); 4 eggs; 1 cup water; 1/3 cup vegetable oil; 1 cup sour cream. Prepare the bundt pan (with Bakers Joy), preheat oven to 350. Combine the cake mix and pudding mix with a spoon in a large mixing bowl. Add the 4 eggs, the water, the oil and sour cream. Beat with electric mixer on medium speed until all ingredients are combined. Pour into prepared bundt pan & bake for approximately 50 minutes. This cake is more like a pound cake- it is dense. Try to match the flavor or cake mix with pudding mix (lemon cake mix with lemon pudding, chocolate cake mix with chocolate pudding mix, etc.) This is another easy recipe and is great with a cup of coffee in the morning!

I made this exact cake the day this was uploaded.....& tonight I made a Duncan Hines orange supreme mix with a can of pureed peaches and made the glaze with a blood orange...absolutely delicious!

Dear Phyllis, This is the recipe I've been looking for. When I lived in California in the early 1970's, our neighbor, Allie Hickenbottom, an Alabama lass would make this for me. I think she used a cup of oil and an extra egg. Now I have to convince my diabetes doctor to let me eat the whole cake at two sittings. Thanks a million!

Thanks Phyllis. I remember making this same Apricot Nectar Cake and loving it but lost the recipe. I am so happy to get it back. Thank you for the recipe again. Here is a cake my son and husband have loved for over 38 years. It is a coffee cake, and kin to a Pistachio Cake. It is called Pistachio Amaretto Nut Swirl. 1 Pkg. Yellow Cake Mix 1 Pkg. Jell-O Pistachio Instant Pudding 4 large eggs 1 cup sour cream 1/2 cup corn oil 1/4 cup Amaretto Liquor FILLING: 1/2 cup granulated sugar 1 teaspoon cinnamon 1/2 cup chopped pecans Preheat the oven to 325 degrees. Get out a 10" tube pan and have Baker's Joy ready to spray the pan just before adding the batter. Set aside. In the bowl of the stand mixer, with the paddle attachment, add all of the cake ingredients to the bowl. Mix the cake until the ingredients are just combined. Stop the mixer and scrape the bowl down. Mix the batter for 2 minutes. While the batter is mixing the two minutes, prepare the filling by combining all the filling ingredients until well mixed. Divide the filling evenly into two small bowls. You do not have to do that, but to me, it is easier. Set the small bowls aside. When the batter has finished beating, spray the pan and put 1/3 of the batter into the bottom of the pan. Next put 1/2 (one of the small bowls) of the filling on top of the batter evenly. Put another 1/3 of the batter over the filling and spread it out nicely. Add the remaining filling over the batter as evenly as possible. Lastly, add the remainder of the cake batter and spread it out to cover the filling. Place the cake in the oven for 50 to 60 minutes, mine takes 50 minutes. Cool the cake on a rack. I sometimes make a glaze and sometimes don't want to. If you would like to, place 1 stick of butter, 1/2 cup granulated sugar and 1/4 cup Amaretto in a saucepan and heat until the butter and sugar melt. Serve a couple of tablespoons of this sauce over the top of a slice of cake, and then add some whipped cream, just because you can! I made this cake tonight and had a horrible accident. The Baker's Joy made the cake so slippery in my new tube pan, that it went sliding out so fast I had to catch it. In the process, I had made some wonderful homemade chicken broth for Thanksgiving to freeze, that was cooling next to the cake, and I knocked the broth over. I did catch the cake, and only 1/2 of it got my wonderful chicken broth on it. My guys like this cake so much there is only a little left, chicken broth and all. My kitchen was a wreck with grease and broth everywhere. There is nothing like Baker's Joy and a new pan to get your cakes to slide out with ease. I hope you enjoy this coffee cake.

I'm going to put these ingredients on my grocery list and make it this weekend in honor of mom who sadly passed last year at age almost 91. Sorry to hear of your mother's passing. My mother passed several years ago and she also loved anything lemon, she use to make that pie with Eagle Brand Condensed Milk and lemon, she just used vanilla wafers as a crust.

Phyllis Stokes Was it an ice box cake? My mom made a lemon ice box cake with those 'Nilla wafer cookies, but I have no idea what the ingredients were. She also made lemon crinkle cookies (like the chocolate ones) and drizzled a light lemon glaze on them.... Oh I can just taste them now. Sorry about your mom too, but at least we have some good memories that keeps them alive in our hearts! ♥️ Edited to say I meant ice box pie, not ice box cake ( which she also made, lol )

Looks really good as always Mrs Phyllis. My cousin use to make an Apricot Nectar Cake. It was probably the same as this one you made. I can't believe it's hard for you to find Apricot Nectar. I see it often in stores. This makes me think back to when people would make Plum cake using Plum baby food. That is a delicious cake as well. Never hear about those anymore.

This was my mother’s signature cake for many years, however she would let the cake cool completely before pouring on the glaze and it made a beautiful white drizzled icing. I’m sure it’s delicious both ways, but your way is much quicker since you don’t have to wait until the cake cools before you get to enjoy it. Yum!

Ms. Phyllis I just love your channel. Love to watch you cook and bake the old time recipes my mom used to cook when I was a lil girl. I had a hard time for the longest time to find he bakers joys spray and as like you I hate it when it gets all over. I had a bakery and it would be expensive to buy that and hard to find, so I use equal amounts of shortening, oil and flour and it makes a paste sort of a thick pancake batter consistency. You can brush it in and get in all the nooks and crannies of the bunt pan and it works great with regular pans you bake in as well. and no over spray with it. And I just keep mine in a jar and put it in the cabinet and use it any time I am baking. Hope maybe you find this helpful. Hugs to you and you lovely family.

I actually made this cake twice over the weekend, because everyone in my family (our son, my brother, 6 sisters, and lots of nieces and nephews gathered for our spring cleanup at our Mothers house) all loved it so much they kept asking for more. It's so good, reminds me of the Lemon cake I usually purchase at our Sams club for about 15 dollars. Thanks so much for sharing this video!

Wow that looks good! I made a lemon cake using a mix and your favorite - Jello! Probably another oldie. 1 box yellow cake mix (I used Duncan Hines), 1 3 oz. pkg lemon jello, 4 eggs, 2/3 c water, 2/3 c canola oil - mix all that together for 1 min until combined and then beat 2 min on med. Pour into a greased/floured tube or bundt pan and bake at 350 for 38-45 min. Cool 10 min and then take it out of the pan. Glaze: 1 c confectioner's sugar, 3 T fresh lemon juice, 1 tsp grated lemon peel; stir until smooth and drizzle over warm cake. Very moist and very yummy! PAM also makes a baking spray that works very well if you can't find Baker's Joy.

My Mother always made this cake she call it Apricot Nectar Cake. it is delishous! I make one the other day and it always brings back Memories when Mother used to make it. for the icing she used was powdered sugar and Apricot Nectar juice she would take a tooth pick and poke little holes in the cake before drizzling the icing over it. was so delicious. Your the only person that I've seen make this cake since she passed. My sister lived in Myrtle Beach for years and had no problem finding the Nectar at her Walmart think she would get it at Carolina Forrest Walmart when she lived there. Thank you for making this cake.

Hi Phyllis, when I was a kid back in the 1960s, I spent a lot of time with an elderly neighbor lady who was like a grandmother to me. She was a great cook and I have so many fond food memories from her kitchen. This is one of them as she made this cake quite often. It's funny you should post this as I have been thinking about making this cake recently. Thanks for the tip on the apricot nectar. Sock- it- to-me-cake was another favorite. I think these older and sadly forgotten recipes are some of the best! Thanks for keeping them alive.

I looked at WalMart online and they have it in the store too. Its probably in the Latin food aisle. It's a brand called Jumex Apricot Nectar.

I remember this cake when I was a teenager. My step mom make this at Christmas, she used Kearns neactor in a can , Can't be found anymore. I have wanted this cake for years, thanks , I'll try this today, have to use gluten free cake mix. Use your jello recipes all the time, delish!!!! My step mom was from the south, she cooked like do, just good ole fashion food. Love it

Apricot nectar is one of those things that you could readily find years ago but is not available today. My mother loved anything apricot and I remember the large bottle of thick apricot juice. She drank tons of it. Very nice Phyllis, you are a wonderful cook.l.

I have been looking for apricot nector for a LONG time but no luck! I used it for my mother's delicious apricot/pineapple Jello salad. Thanks for suggesting the use of of canned apricots, Phyllis. I will definitely be using this handy hint. I am constantly complaining to my husband how food companies are changing the weight measurements of cans and boxes... my recipes all have to be "adjusted." Have you noticed how terribly small the cans and packaged foods are becoming? I picked up a can of soup the other day and was shocked. Of course, the price was the same or more! It sure makes it difficult for us cooks! I am so happy that I found your channel last year! You are a ray of sunshine, It is great fun to see a woman my age on the screen with so many talents. I would never miss an episode! Hope you and Mr. Bucky have a wonderful summer!

I just thought I should say, I made your falafel and corn pudding the other night. Made your prune/mandarine orange dumplings a few weeks ago. My Mom made a similar cake and I use to make it to take to work. Lemon Cake mix or any flovor you prefer baked in a bunt pan. Cool, take out of pan and use a thin metal or wooden skewer stick to put holes in cake. One cup sugar and juice of lemons. Fill the sugar to the top with lemon juice. That's it and everyone always loves it. I was hgoing to tell you what others have said. Look in the Latino section on the international isle for peach nectar. I use to buy it for my son once in awhile when he was young.

Growing up I did not like cake!? By the time I was 2yrs old I disliked to the surprise if all who attended my parties growing up. Ice cream is what I favored. One day my mom made a lemon cake and it was so sweet, moist, and delicious I had more than one serving, 😆 This recipe reminds me of my mom (may she rest in peace) and maybe she is sharing laughs with Phyllis today! ❤🙏🕊

Most full size Walmarts carry apricot nectar by the brands Goya & also by the brand RW Knudsen.I know the Goya products are normally in the Latin section.

Ms. Phyllis that looks really delicious and so moist, my mouth is watering! Great idea about the apricots in the food processor. My mom would make devil's food or yellow duncan hines and add half a pack of chocolate chips to it in the bundt pan. We all loved that almost as much as her yellow or white sheet cake with boiled icing and coconut flakes.

I used to make a version of this all the time for my best friend. But I added orange juice to the yellow cake mix and poured a orange juice/confectioners mix( same measure as your glaze), over the cake before removing from bundt pan. Let sit for 10 minutes then remove cake. But your recipe sounds delicious!

YUM! My Grandma made a similar cake using apricot nectar, in the cake, but it had a sauce made with apricot nectar and either a few spoonfuls of rum or rum flavoring. Haven't thought about it in years. Also, if you have a Latino section in your grocery store (or a Latino market nearby) Goya sells nectars of all kinds in cans and tetra packs.

My mother's recipe for a similar cake used yellow cake mix (instead of lemon) and also had apricot nectar in the icing - about 50/50 with the lemon juice. It was fantastic. I think she got it off the side of the cake mix box. I also have a recipe for something called a Plum Dump cake, which is a Bundt cake made from scratch with plum baby food in it. It's also hard to find plum baby food now, but I am going to try making it with mango baby food. If it works out, I will post the recipe.

Just so you know, Miss Phyllis, you can order apricot nectar from both Amazon and Walmart if you want. One I saw on Wal-Mart's website was available for free shipping. I buy a lot of food items from both places and have it delivered. This sounds like it will taste great!

I can usually find Kerns Apricot Nectar in the juice aisle at any of our local stores, but I liked how you made it from the canned apricots and will have to give it a try. As far as the lemon cake goes...its definitely my favorite flavor! I now will be trying this recipe over the weekend. Thanks for revisiting recipes from the not so distant "past" eras, they take us down memory lane. 😊

I use appricot baby food . I have a recipe for pork roast from my aunty in Oklahoma from the 70’s and I could never find apricot nectar in Canada ... it’s a great substitute .:) thank you Phyllis

I'm so happy you like the spray. It is the only baking spray I buy. If you have a Hispanic foid market in your town you might can find the netar in it. Are with the Mexican food in a grocery store. I've seen it in my food lion but I live in NC.

Jumex is the brand I was trying to think of and they do make it in apricot nectar. In my grocery store its down with the Mexican food and its in a blue can (like a soda can). Its $.59 in my town and the brand has a few more nectars. I hope this helps.

Hi Ms Phyllis! This was such an inspiration on a beautiful spring day, I had to try it! Found the apricot nectar at Publix but I want to try the apricot puree as you made & substituted. I made the glaze a little thin and spooned it down the sides of the cake soon after taking it out of the oven while it was cooling in the bundt pan. Using a straw, I poked several holes in what would be bottom of the cake, too, once it was inverted on a plate. The cake tends to absorb the glaze when it's just taken out of the oven & still hot. Never hurts to make a little extra glaze to spoon over after inverting onto a serving plate....we like glaze!! Thanks for another video in your "quick & easy" series, Ms Phyllis! This cake is wonderfully light and delicious! Easy to see why you & Mr Bucky enjoy it so much! Your desserts don't last long at our house, believe me!
