Here is the part 2 of the collaboration with Dara as notified last week!
I attempted to cook some Filipino cuisine for Dara who accepted my invitation and helped shooting something amazing for my channel despite her busy schedule. I’ve never been to the Philippines so I’m definitely not an expert and only cooked based on my hunch and the recipes I studied. So, this is the Ilwoo’s interpretation of Beef Kaldereta, Seafood Sinigang and Garlic Rice! Please see the recipe I tired below and try making it at home ;) Even though it was not the original taste she was expecting, thank you Dara for eating with me. Thank you to my 1lwoolies who are always there for me.

I’d like to dedicate this video to my long-time colleague and friend, Dara.
_ Beef Kaldereta
* Ingredients: Beef brisket (600g), garlic, onion, 4 pieces of bay leaves, pepperoncino, 1 can of whole tomatoes, seafood MSG (used instead of beef broth), 2 pieces of potato, 1 piece of carrot, green olives, 1 piece of bell pepper
* Preparation:
- Finely chop the onion
- Slice 2 pieces of potato and 1 piece of carrot into cubes
- Wash 1 piece of bell pepper and slice into cube
* Instructions:
1. Heat the cooking oil in the cooking pan
2. Sauté the onion and garlic until they get browned.
3. Add the beef with salt and pepper to taste. Cook until the color turns light brown.
4. Add the dried bay leaves and crushed pepper and stir well.
5. Add the crushed whole tomatoes and bring to a boil, and also add seafood MSG.
6. Add potato and carrots until cooked.
7. Put the green olives and bell peppers to add the extra flavor.
8. Add salt and pepper to taste.
_ Seafood Sinigang
* Ingredients: tamarind paste (used instead of the sinigang powder), daikon radish, cherry tomatoes, seafoods (cod fillet, scallops, shrimps), pickled pepper, morning glory (water spinach), 1/2 onion, lime, fish sauce
* Preparation:
- Wash the seafood in water and drain water
- Wash the veggies
- Separate the leaves and stems of morning glory
- Finely chop the onion
- Chop the daikon radish into a bite size
* Instructions:
1. Add cooking oil to the pan and stir-fry the onion, daikon radish, morning glory (only stems).
2. Add enough water to the stir-fried veggies and then add the cherry tomatoes and seafoods.
3. Put the tamarind onto a strainer (remove the seed) and dissolve in water.
4. Once the soup is boiling, add the fish sauce to taste.
※ If you want to add the sourness, use the calamansi concentrate (I used lemon sauce and lime)
※ If you want to add the spiciness, add the pickled pepper and spicy pepper.
5. Finish with adding the morning glory’s leaves
_ Garlic Rice
* Ingredients: rice, sliced garlic, olive oil, butter, salt, pepper, oyster sauce, garlic flakes
* Instructions:
1. Add olive oil, butter and garlic into a hot pan.
2. Stir-fry the garlic in medium heat and make sure it doesn’t get burnt.
3. When the garlic turns brown, add rice and oyster sauce to taste and mix well.
4. Add salt and pepper to taste.
