Made this cake for tonight’s dinner! Added 1/2 tsp butter extract. Didn’t put on icing. Instead had strawberries & whipped cream on top for a strawberry shortcake! It was wonderful!! The cake didn’t taste or seem any different from a “normal “ cake! Thank you so very much Victoria!! Now I can enjoy cake again since I am fighting diabetes. May God bless you!! 😊

I made this and it was so good. Instead of icing I added a couple tbsp of blueberries to the batter. It took about double the time to cook but was really really good.

Just made the cake but made two minor adjustments. I always add 1/32 tsp. of sucralose powder to baked goods sweetened with Allulose to round out the sweetness profile. Also, added a couple drops of cake batter flavoring to the batter. The cake is delicious and I will definitely be making this again. Thank you so much for your efforts in helping all of us following a ketogenic lifestyle! I've made many of your recipes and have liked all but one, which was probably just due to personal preference. Thank you so much for sharing your recipes with us!

Yes, McCormick makes it. I also have about 30-40 different flavoring drams from LorAnn Oils. They are super concentrated and worth every penny.

I made this again today but made it in my mini dash Bundt cake maker. Turned out wonderful! I made a chocolate ganache to drizzle over it used Lilys milk chocolate morsels . I heated 1/4 cup half and half and then added my chips to the consistency desired then drizzled over cake I love it warm It was so good!!! Thank you again

Victoria, this was so good that I ate 2 servings and made myself sick. The texture was perfect, like a real cake. I struggle with the grainy textures of most keto flours. I can't thank you enough for all you do and loving the newest flour version.

Tried an experiment with this recipe last night. I added cocoa powder to the mixture and after putting the batter in a baking dish I topped it with Lily’s chocolate chips. Then I baked it in my air fryer for 15 minutes. The texture was much better than cake made in the microwave. Next time I’ll extend the baking time to 20 minutes as it was not completely cooked in the center. All in all though, a great recipe. Thanks Victoria. Darlington, South Carolina

I have only been on keto for a month, but during that time I have tried 3 other mug cake recipes.They were horrendous. I am happy to say this recipe was awesome! I used the NSKF 2.0. Otherwise followed the recipe written. I did divide between 2 mugs and it was a good serving size for my hubby and I. I didn’t make the frosting, just served with berries and whipped cream. I cannot wait to try the chocolate version. Thanks for the recipe!

I made this cake twice. I made two cakes, and I put keto strawberry jam in the middle. I frosted the cake with sugar free chocolate icing that I made myself. This cake is very good. Thank you

Wow! This is so good. Along with the vanilla, I added maple extract. I also added some chopped walnuts. Instead of icing, I sprinkled the top with powdered allulose and cinnamon. Absolutely delicious. 😋👍👍👍

I made this today using your bamboo almond flour and cake batter extract, the taste is awesome and I am using it for strawberry shortcake, absolute perfection! I'm going to make the birthday cake with sprinkles for my birthday on July 18 along with your no-grit buttercream, I am very excited about that as I have not been able to find a keto icing without the grit, warming the cream to melt the allulose was a stroke of genius. I also used the bamboo almond flour to make a single serving of edible cookie dough, I almost cried, so close to the real thing, and no spike in my blood sugar. Keep up the amazing work, you are a superstar in my book!

Ive been hungry all day and its not so quick to whip up a plate of meat!! So I just stumbled on this recipe and thought 'why not?'. This is amazing!!!!!!!!!! So soft, light yet filling, and yum!! Yes, I ate the whole thing, no Im not sorry. I didnt have enough butter for the icing, but that can be rectified tomorrow. Yum. I baked it in my air fryer….only used 1/2 the frosting and it was perfect. Also, it was the Perfect amount of allulose in both cake and frosting. I did use cake batter extract but other than that no modifications needed. Thank you. It’s the best low carb flour I have ever used.

Made this today but instead of milk, I used sugar free, non-dairy vanilla liquid coffee creamer in both the cake and the icing and it came out marvelistic! Thank you for sharing this recipe. Fantastic idea about the vanilla creamer! I used international delight French vanilla instead of water. I made one recipe original with water, and one with the creamer. Hands down I felt the cake with the creamer was better. A tiny difference in the texture (slightly more dense), but the "cake" flavor was superior. I am going to try with cake flavor extract as well..well done!

I've always been super sensitive to the flavor of baking powder - having to cut the amount at least in half even when I ate a standard American diet. So I've been trying to figure out how to cut it back so I could use Victoria's flour for several months. The texture of the baked goods made with the flour was fantastic, I just couldn't 'do' the baking powder. So last night, using her flour recipe from a couple of months ago (because I don't have one ingredient for the new one), I used a third of the amount of baking powder called for in this mug cake, then added 1/4 tsp of baking soda and 1/2 tsp of vinegar - what sounded like the best substitute I found for a teaspoon of baking powder. The results? THE best keto/low carb cake I've had in forever. One commenter for this recipe said she added a little cake batter extract, so I did too. The texture was great, and it was like eating a good cake, rather than the rubbery or undercooked cakes I've tried since going low carb. So, if you're sensitive at all to baking powder, just sub out half of it for the baking soda/vinegar. The flour recipe is amazing, and now that I've found how to solve the baking powder issue, I'm excited to try her other recipes! Tonight though, I'm going to make another one of these cakes for Mother's Day tomorrow. :)

I just made 2 mug cakes ( using 2 ramekins) today but instead of making icing I made them into strawberry/blueberry compote I made ( using fruit a tad of water, Monkfruit and pinch of xanthan gum)…. Then also topped with zero sugar whipped cream ( Reddi Whip from can)….this recipe is ABSOLUTELY “ the bomb”…. Fluffy and NO weird aftertaste….I cooked BOTH ramekins in the microwave so I set timer for 2 minutes 22 seconds….PERFECT! I used water in recipe as I had no special milk. One for me and one for my husband….I took a beautiful picture but I’m too “ techno-challenged “ to add it to these remarks.

I made this cake for my birthday yesterday. I made it a two-layer cake and put no sugar added raspberry jam between the layers and then frosted it with the buttercream frosting. I also added cake batter flavoring. It was absolutely delish. Very moist. Enjoyed by all.

Dear Victoria, I've made this cake now a several times and even my picky brother likes it 👏👏👏👍👍👍👌👌👌 - the only thing that didn't work for me was the buttercream - I've tried it twice and both times it wasn't smooth at all and the liquid seperated! 😱🤔😟 I use now whipped cream instead 😇😇😇! I"ve made a *"little tweak for me"* - curious just to try it - and it came out *"D E L I C I O U S"* and my brother likes it that way even moore and me too 😁😁😁 - *"I added 14g (1 tbsp) melted butter to the batter"*!! 👌👌👌 Nice greetings from Germany, Ela 🤗

Yesterday, I made this recipe with the new standard keto flour 2.0, oat fiber/almond flour version. Wow, what an improvement! The old version was good but it has a much better texture with the new flour mixture. Over the last two days, I have used it to make jalapeño cheese bread to eat with chili and as biscuits with sausage gravy for breakfast. The possibilities are endless with a little imagination.

I made this tonight and used a large round mug then I cut the cake in half and added strawberries 🍓 that I sweated with monk fruit. I also used monk fruit instead of Allulose. I messed up on the icing so tomorrow I need to get more butter and throw that on top or I may just use whipping cream on top. It really tastes like strawberry shortcake 🍰 ty Victoria. I did shorten the PKF slightly and add more almond flour bc I felt the xanthum gum was to pronounced. The next time I make a new batch of PKF I'll shorten the grams of xanthum gum

VICTORIA I DID IT!! I had to make this cake before the buttermilk biscuits!! Oh my it is good!! I did a cpl of switch-ups : I used Cream cheese flvg in the cake & Almond Flvg in the Icing only bc I'm not a fan of vanilla... I did add a bit more than recipe calls for & it caused the butter to curdle like... I'm guessing it was the alcohol content or bc my flvgs/extracts stay in my frig. & it was cold. I ran out ofAllulose so I added a bit more stevia powder, it seemed to help with the curdle problem but I still had a problem getting the Icing to spread onto the completely cooled cake... which also I lightly sprayed my dish which I will use Parchment paper next time& yes there will be a next time 😊.. overall the cake& Icing are delicious!! If you have any suggestions as to what caused the butter to curdle etc, & not spread easily, please feel free to respond.

I'm not Victoria but I am an avid baker of about 50 years...if your butter wasn't curdled until after adding the extract I'd guess that is the issue. Something I've done to reverse that in the past is to either microwave it for about 10 seconds (watching it carefully so as not to melt it but instead just to barely heat it enough that the fat is no longer solid) orrrr fill a bowl about halfway that's just a bit larger than the one you're mixing in with hot water & then sit your curdled frosting bowl into the hot water bowl and begin stirring/mixing this should work fairly quickly. This hot water bowl method also works for cake batters that have curdled as well. Occasionally, I've had to empty the bowl of water because it gets too cool and add more hot water but it's worked every time I've tried it. Hope this helps you. ❤️

OMG Victoria!!! You absolutely rock! This cake is AWESOME! The next time I will add shredded coconut to the icing. I love love love coconut cake. I can’t wait to make the donuts because donuts for me with organic coffee is my favorite thing in the world. Do the donuts freeze well?? I want to enjoy these twice a week AT LEAST! I just made this cake using 42 grams of NSKF 2.O and it worked! Reminded me of a sponge cake my mom used to make us as kids. But I was wondering what if I added some buttermilk powder and just used egg white? If so, how much buttermilk powder would I use? Thank you for the wonderful recipes! 2 minutes worked fine. I forgot to decrease amount of batter to make up for being smaller cube...ended up with a huge cake when I put 2 baked cubes together. All is well...I covered the cake with your frosting and unsweetened coconut. It's yummy! Tastes like the frozen Pepperidge Farms coconut cake we used to love. Hubby is "one happy camper"...got his coconut cake back!

the mini bundt maker is the best, especially for mug cakes that are keto, steve at serious keto on youtube did a comparison of the mug cake in the microwave and the mini bundt maker and the bundt maker turned out way better and more moist, so i bought one just because of his video and man what a difference it makes

I cannot have butter. I substitute with coconut oil. At times forgot to add it😂 the cake was fine. I make changes like adding instant coffee diluded with little hot water to chocolate cakes when using cocoa powder. I have added matcha to icing. Both as powder or diluded with little warm water... I had poked holes on the cake to moist it with coffee or matcha before icing it .. The options are endless. I bake and freeze in small portions.

I tried this cake and like most keto recipes I tried, I was expecting to throw it in the garbage and I am a very picky eater. This one however, tastes so good and like actual cake. I was surprised at how good it tasted and I just had to have another batch. Safe to say this will now be one of my staples when it comes to my keto diet and I'm putting the recipe down on my phone when I get the chance as I keep all of my staple recipes on my phone. Really outdone yourself with this one. My issue....is the frosting....I never had a good keto frosting and unfortunately this one is not it either. Tastes very off. I've tried other frostings like chocolate frosting and that did not taste great either. I've had good keto cakes, but keto frosting...just has not happened yet 😞would love a similar mug cake style video but with a chocolate cake instead ^ ^ appreciate the vids.

Great recipe and worked out very well. I microwaved it but the next time I make it, I will try baking it to compare the results. I tried the frosting but I think I added too much liquid and so it was more like a glaze. It tasted great but not what I was going for. Next time, I think I will try the whipped cream and strawberries. Thanks for all your great ideas!

Oooh was just thinking about adding lemon extract, chia and poppy seeds! Then top with a keto simple syrup or glaze. That may be wonderful.

If I were to turn this into a regular-sized cake to bake in the over, would you guess that I should do 4x the ingredients? I bake to a temperature of 200 degrees, so no need to comment on the bake time. Thanks!
