How about doing a parisian market showcase when you really get accustomed to your neighborhood? All those open produce stalls and hole in the wall cheese/meat places would be great content.

i like these live videos because we get a good understanding of workflow and sense of time theyre very good for beginners but people with experience will just prefer a quick list of ingredients and steps maybe add at the end a section like that (a recap or smth) and in the very beginning tell them to go to right to the end if thats what theyre looking after, best of both worlds also, you had a perfect balance of keep this live and skip this part or fast forward

I love how you brought the live cooking concept from your fast food videos to your normal recipe videos. It makes cooking these dishes feel less intimidating when you can get a true feel on how long it would take to prepare!

Thanks! I've wanted to experiment a bit with the video formats on my channel, we'll see what happens, but I think some mix of the in depth / technique based videos (like my last one) and the laid back live recipe (like this one) would be a nice balance production wise.

It’s the little things you get to see with this video type that I appreciate like seeing that the pan was heated first and the adding in more soy sauce as the broccoli is cooked. Gives a better idea of what it is like to actually make it good!

I rarely ever post on videos, but I've been down a rabbit hole the last couple of weeks watching hours and hours of your videos. Just needed to share my respect - Some of your recipes and techniques have made home cooking so much more enjoyable. This dish was simple, delicious and honestly fun to prepare. We've avoided a couple of fast food trips already simply because I see how you're making home versions and it's made me want to try. Almost everything has come out better than I had expected (especially for first tries) and has me itching to prepare them again so I can improve on where I think I've made errors. This is already longer than I intended, but simply put, thank you for sharing this amazing content and please keep it coming. I never thought cooking at home would be this fun, efficient or delicious. Thank you!

Hi Ethan, in Germany we eat Maggi (named after his swiss founder) usually with boiled egg (try this!!!). Its basically MSG but has its origins in "Maggikraut" which is a plant named Liebstöckel (engl.: lovage?) and it smells exactly like Maggi. The Liebstöckel thing is actually a common misconception, that it tastes/smells similar is pure coincidence. It's vegan tough.

Swiss Maggi has MSG. Chinese Maggi does not. My SO is sensitive to MSG, so I always check the label.

@@AmanKumarPadhy The Indian brand of Maggi (noodles) is different from the sauce shown here (both are owned by Nestle, though). In Mexico, they use this sauce a lot (even in drinks like Micheladas), and I know what's exactly in it. It's mostly a mix of Soy Sauce and MSG.

For an added step on your protein, try "velveting" your meat for stir fries. It'll help tenderize cuts that are tough or dry. Think chicken breast, or non fatty pork cuts, flank, chuck, etc.

@@ginismoja2459 you add your dries, seasonings, salt pepper etc. Your wets, soy oyster sauce, maggi, whatever. And then add egg white or baking soda or cornstarch, and essentially what it does is it helps to tenderize the meat and help it retain moisture white giving the meat a nice extra browning on high heats. So any Italian meatball recipe that uses egg whites or a Chinese stir fry chicken with corn starch leverages this velvetting technique.

I like the live stuff honestly. With a lot of creators it can be a little awkward to watch live content I find, but even though you're obviously not a super lively and extroverted person it's calming and genuine content and relaxing to watch. It's also a nice change of pace from hyper edited, "artificial" content in the food tube which, whilst entertaining, kind of gets wearing after a while (at least for me). This has more of those old school cooking show vibes.

Putting the rice back in the wok that was used to cook the food is crucial it makes sure the seasoning isn't wasted, and gives your rice some flavor

Ethan, glad you're posting again! I've just done your Beef&broccoli with Lao ganma with black beans (tau cho) and substituting pork with broccol--I, regrettably, amnot a beef-eater. It was great!! and I ate it with glutinous rice rather than regular Botan rice. Do post some of your parisian adventures.

I like this 'weeknight meal' short cook along format, especially where you make use of leftovers. I often find myself shying away from cooking in between meal prepping as I work shifts but this one meal alone has me wanting to treat myself to better food that doesn't take too much thought and produces great flavour. I look forward to whatever you try next!

@3:30 damp towel works ok... but I found a silpat between counter and cutting board works better. That, or attach some rubber feet to one side of the cutting board.

I had that very same "dang that was good, but also easy!" tonight, actually! I made a "taco salad" a bed of shredded romaine, a layer of white and wild rice, some basic mexican seasoned ground turkey, and topped it with a bit of pico de gallo, and sour cream. [not a huge fan of cheese or olives, but this was good! but I do love me some broccoli beef!

As an American who lived in Germany for a couple years, it made me feel better about how you struggled opening the prepackaged meat too! That cardboard is deceiving the first couple times. Prepackaged fish comes in those same types of packaging.

If you have time I would recommend you to go to one of Tang Frères shop or K-mart shop ! As a French Eurasien theses stores are so my go to in order to find all kind of sauces and spices that are essential to make asian style food, especially since you won't be able to find it in common supermarkets 👀

I really like this live series. What I would have done is the following: With the beef, I would have added maybe a teaspoon of oyster sauce for a different dimension. For the broc, I like it still with a little crisp but still actually steamed so I would have just left it in the wok for a few more mins, covered with a metal bowl to get a more steamed effect. And then at the end I would have probably sprinkled over some toasted sesame seeds and/or sliced green onion or cilantro to fancy it up a bit. You already know about the rice so... lol. Good video though. :)

Maggi is in poland kind of major spice for us, we use it for almost everything, pierogies, soups, rice and i use it to anything

I actually thought you wanted to explore the French cuisine since you’re there, maybe to give you’re take on some nice French dishes… also, France (and Italy) are probably the best places to get amazing desserts (cakes and pastry). The 'Maggi' you're referring to is an extract from lovage leaves. Very popular as substitute of soy sauce, especially in Central-Eastern Europe. IMO, It is more salty in taste than soy sauce. Perfect for soups :)

Shame about the rice but everything else looked excellent. I love this format also. It wasn't too long of a video and you showed the whole process is a lot easier than one might think. Also, great tip about throwing the beef into the freezer for an hour. I've always struggled with slicing the beef into thin pieces. They've always come out thicker than I want and therefore they become tough to eat after stir frying

While obviously we love the full production videos...cooking live and 1 take makes it more real for everyone to really see that cooking doesn't take all day and you can make amazing simple dishes.

i found the magi seasoning marketed elsewhere as gluten free soy sauce i think (or it mightve been GF worcestershire i dont remember) but it was really good
