It's not the most exciting video, but I happened upon this when I was trying to reset my trip mileage and kept the "OK" button on the steering wheel pushed when I turned the ignition on. A neat little hidden menu comes up for what appears to be a self-diagnostic mode. Aside from the DTCs (troubleshooting codes), I'm not sure if there is anything really of use. I don't think we can really change any of the settings for tuning here either.
Upon further investigation I found this at mr-fix.info (for a Ford Focus, but I suspect all of the newer Fords have this capability and have something similar):

ECOmode - status of the economy rating function
HW - hardware version
App - software version
NVM EEPROM - non-volatile memory version

DTC - diagnostic trouble codes
Speedo gauge - vehicle speed in km/h and mph
Tacho gauge - engine speed

Fuel% - raw fuel love data in HEX
Fuel flow
Engine temp - coolant temperature
Battery - voltage
Dist. to empty - estimated distance to empty tank
AFE - average fuel economy
RAFE - running Average Fuel Economy
AFE Bias - adjustment of the fuel economy calculation (default: 1000).
A/D Input - values from analog and digital inputs.
