We're serving sweet gluten-free pierogi at the Atelier of Taste today. Some say that the sweet potato filling reminds them of cottage cheese. They are very easy to make and simply delicious!

Recipe:
Time: 1.5 hours
Amount: 2-3 portions
Dough ingredients:
1/2 glass rice flour
1/2 glass potato flour
1 tablespoon oil
1/4 teaspoon of salt
1/2 - 3/4 glass boiling water
Filling ingredients:
400 g sweet potato
2 tablespoons coconut flower sugar
Juice from one lemon
1/-2 glass teff flour
1 teaspoon candied orange peel or zest from 1/2 orange
Instructions:
Peel the sweet potatoes and steam them until they are soft. Put them aside to cool. Mix the dry dough ingredients and divide them into halves.
Add boiling water to half of the flour and mix it very quickly, so that it turns into a smooth gruel. If it has lumps in it, blend it so that it becomes smooth.
Put it all aside so that it cools and in the meantime mash the sweet potatoes with a fork, add lemon juice and orange peel to them, sweeten them with sugar and thicken them with teff flour.
Put the stuffing made this way aside and start kneading the dough.
Add the other part of the dry ingredients and knead the dough until it is smooth and flexible. If the need be, add a little potato and rice flours or water. Near the end of the kneading, add oil and knead it again. Boil water in a pot.
Divide the dough into several parts. Roll each of them out with a ceramic or silicone rolling pin on a silicone mat, so that the dough doesn't stick. Cut circles out with a glass or a mug.
Put a teaspoon of the filling in the middle of each of them in such a way that it is possible to stick the edges together with your fingers. Stick it together carefully, so that the filling doesn't come out.
If the dough makes your fingers sticky, dip them in rice flour.
When the pierogi are ready, put them in boiling water and cook them for 2 to 3 minutes after they surface,
Serve them hot. Sprinkle them with coconut sugar or pour soy cream over them.
