I'm sorry for the biggest "uhm actually" moment I've ever had, BUT. The girl at the top of the Donkey Kong levels is NOT Princess Peach, but rather a generic character named Lady that gets later retconned into Pauline! The Nether Fortress Wells are actually the Nether Fortress Hubs, and the rest of the Fortress generates from them. While not necessarily in the center, all parts of the Fortress can be accessed from the generation point. Also, if you take a Map to the Nether that was generated in the Overworld, you will be able see your Cursor move on the Map, albeit at 8x Speed.
