Recipe :
Corn Papdi Chaat
Preparation Time: 5 minutes
Cooking Time: 5 minutes
Serves: 3-4
Ingredients:
2 cup corn
20 -25 papdi
1 tsp oil
1 tsp cumin seeds
¼ tsp hing
½ cup chopped onion
1 tbsp chopped green chillies
Green chutney
Sweet tamarind chutney
Sweet curd
Fine sev
Pomegranate seeds
Chat masala
Chopped coriander leaves
Method:
Heat the oil in a pressure cooker. Add the cumin seeds, hing followed by the corn, ¼ cup water. Cook for 2 whistles and blend with 2 tbsp yoghurt to a coarse paste. Add chopped onions, green chillies, lemon juice and mix. Spread on a platter. Line with papdi. Top with chutneys, sweet curds, sev, coriander and chat masala.
Achari Gobi
Preparation Time: 5 minutes
Cooking Time: 12-14 minutes
Serves: 3-4
Ingredients:
1 cauliflower
1 cup curd
Prepared ginger green chili paste
1 tbsp mix pickle
1 ½ tsp Degi red chili powder
¼ tsp Turmeric powder
A pinch of asafoetida
1 tsp Coriander powder
2-4 tbsp Mustard oil
½ tsp Cumin seeds
¼ tsp Fennel seeds
¼ tsp Onion seeds
¼ tsp Mustard seeds
2-4 Fenugreek seeds
2 Dry red chili
Coriander leaves
Method:
Heat mustard oil in a pan. add all the seeds followed by cauliflower florets, fry lightly for 4-5 minutes. Mix all the powdered spices and salt in yoghurt. Add to the gobi, mix well, cover and cook till tender. Garnish with chopped coriander and serve.
Palak Paneer
Preparation Time: 5 minutes
Cooking Time: 10 minutes
Serves: 3-4
ingredients:
500g Spinach
250g paneer
½ tsp cumin seeds
1 large onion, sliced
2 tsp cloves garlic, chopped
1tbsp ghee
1 tbsp ginger chilli paste
1tsp lemon juice
1tbsp cream for garnish
Salt to taste
½ tsp garam masala
Method:
Boil the washed palak leaves with onion and half the garlic till done. Blend to a fine puree.
Heat the ghee and add the cumin seeds and the remaining garlic. Sauté till golden. Add the puree, salt, ginger chilli paste and garam masala. Add paneer cubes and cook for 4-5 minutes. Add lemon juice, mix and serve.
Matar Pulao
Preparation Time: 5 minutes
Cooking Time: 15 minutes
Serves: 3-4
Ingredients:
2 cups rice
1 cup shelled peas
1 tsp caraway seeds
1 cinnamon stick
1 bay leaf
2 green chillies
3-4 green cardamoms
1 tsp lemon juice
Method:
Wash and soak rice for 20 minutes
Heat oil in a pan, add the whole spices, slit green chilies and splutter, add 4 cups water, 1 tsp salt and bring to a boil add drained rice and cook till 80% done. Toss the peas in 1 tsp oil and add to the rice cook till rice is done.
Malpua
Preparation Time: 5 minutes
Cooking Time: 5 minutes
Serves: 3-4
Ingredients:
1 cup flour
1 ¼ cup milk
¼ cup khoya
A pinch of baking soda
1 cup sugar
1 cup water
Method:
Blend together the milk, flour, khoya, baking soda and 1 tbsp sugar to a smooth paste.
Make a syrup of 1 string consistency. Heat a non-stick tawa and brush with oil. Pour ladleful of batter to make pancakes. When crisp on both sides, add to lukewarm syrup.
