Hi! I roast the butternut squast whole in the oven. I poke holes in with fork tines and let it roast for 30 minutes. THen cuts in half easily. You can then turn then down to roast the rest of the way. Once it is cool, you can easily peel the skin. It is definitely the lazy way to keep all your fingers! Love your channel and videos!

Went out and bought a butternut squash right after I saw this video. The soup came out great (I can't help but want to add a few pieces of crumbled up bacon to this though)! I've only worked with butternut squash once before--I was trying to duplicate a soup a friend made, and after hours of prepping and cooking up the squash on the stove it came out very inedible (I didn't know much about seasoning or mirepoix at the time). I was really excited to make a second attempt after seeing this video. Since then I did see some tricks for prepping the squash. If you warm up the halved squash in the microwave for three minutes or so and let it cool down a bit, the skin peels off very easily with a knife. The meat directly under the skin softens up, so that made the skin a lot easier to pull off. As an added bonus I discovered how the butternut squash is really tasty roasted in the oven, I'll definitely be making more of that too.

For the butternut squash, you could slice the squash in half and brush with the maple syrup instead of adding it directly to the soup. Bake and then scoop out the flesh. You'd get mucho caramelization without having to peel or chop. Would also be awesome with a pinch of cinnamon or chili powder sprinkled on it before baking. Love your recipes, man.

First let me say that I almost fell off my chair when I saw the bowls your demo shots are in. I have those bowls plus the larger ones. I have never seen anyone besides me use them, I loooove them. (Can’t beat anything vintage!). Those soups look unbelievable and can’t wait to try them, minus quinoa (allergic). Please please please do more ......thanks for sharing

Since you are roasting it in the oven you can cut it in half and peel it after you roast it, and then chop it up. That's sooooo much easier. I saw in other comments that you like to get the max carmelization , you can do a partially roast, then peel, and chop, and return to the oven, maybe? Just a thought. Thank you for all of your recipes., love watching your videos. All of your techniques have changes how I cook. Thanks for everything. :-) Please do a part two, and three... and maybe even a 4. soups freeze wonderfully and are perfect for any meal, all fall and winter long.

Thanks! The bone broth is sooooo easy! We dont eve bother roasting the bones. You can find some really easy ones online. Its basically water, bones, salt, vinegar, and some aromatic veggies...and 10-12 hours!

Jesus Christ Bobby these look amazing and so do you! I wasn't expecting to see the egg-lemon mixture, that was great! We have it in Greece too and it's called avgolemono! It literally means egg-lemon lol! We make a fantastic soup with it with small beef meatballs and a bit of rice in it, it's so simple and heavenly, I think you'd love it

My way to peel: Cut it in half and take the seeds out then bake it at 3:50 for about 20 minutes, Then it will be a bit softer and you can peel it with a peeler. And then go from there with your recipe

Really want to see that potato leek soup recipe. For butternut squash, cut in half lengthwise, remove seeds and place face down in a deep baking tray with plenty of water. Bake at 375 until a skewer goes in with ease. Easily peel it with a regular vegetable peeler

Bobby! Halve your squash & place halves face down in baking dish. Add 1” water. Cook til soft, scoop out the squash. Much easier

I always use a veg peeler to peel the squash. I usually cut it in half and peel from there.

+MizzRowe you need to buy organic, 100% grass fed beef bones from the femur. If you can get them freshly cut by the butcher that's the best. Whole Foods seems to always have fresh ones in stock
