1st recipe. Carrots with yogurt
2 carrots
1 clove of garlic
200 g unsweetened yogurt at room temperature (8 tablespoons)
4 tablespoons of extra virgin olive oil
1 level teaspoon of salt
Decorate,
Parsley leaves, chopped
Extra virgin olive oil
Fried sesame seeds
• To peel carrots, place a knife blade on top of the carrot and press on the surface to scrape a thin layer of skin from the carrot. Just be careful not to remove too much meat from the carrots. A light scratching of the top is sufficient.
• Heat a medium pan over high heat and add 2 tablespoons of extra virgin olive oil.
• Fry the carrots and a clove of garlic for 5 minutes and do not stir for the first 2 minutes to brown the carrots.
• Cook for another 3 minutes and season with salt, stirring occasionally. Do not stir or knead the carrots.
• Take out a clove of garlic and crush it.
• Put the carrots in a bowl, add 2 tablespoons of extra virgin olive oil and let cool a little.
• Mix the yoghurt, garlic puree and a pinch of salt until creamy.
• Mix the carrots with the yogurt and place in a serving bowl.
• Drizzle with extra virgin olive oil and sprinkle with parsley leaves and toasted sesame seeds.
2nd recipe. Celery with walnuts and tahini yogurt
1/2 medium coarsely grated celery
3 cloves of garlic, peeled
2 handfuls of walnuts
3 tablespoons of extra virgin olive oil
1 tablespoon tahini (you can also use peanut butter. This is not as good as tahini, but feels the same)
200 g unsweetened yogurt at room temperature
1 teaspoon of salt
Pinch of black pepper
For decoration,
Pistachios, chopped
Parsley, chopped
Red pepper flakes
Extra virgin olive oil
• Heat a large pan over high heat and chop the walnuts in it.
• Fry the walnuts for a few minutes and add the celery, garlic cloves and olive oil. Do not stir for the first 3 minutes to brown the celery.
• Cook for another 3 minutes and season with salt, stirring occasionally. Don't stir too much and mash the celery.
• Remove the garlic cloves and mash them.
• Put the celery and walnuts in a bowl and let cool down a little.
• Whisk the yogurt, garlic puree, tahini and a pinch of black pepper until smooth and creamy. You can add a pinch of salt if you like.
• Mix the celery with the yogurt mixture and place in a serving bowl.
• Drizzle with extra virgin olive oil and sprinkle with parsley leaves, paprika flakes and pistachios.
3rd recipe. Zucchini and Carrots with Dill and Yogurt:
1 - 2 small zucchini
1 carrot
1 clove of garlic
2 handfuls of walnuts (peanuts or cashews work well)
3 tablespoons of extra virgin olive oil
200 grams of unsweetened yogurt at room temperature
1 tablespoon of mayonnaise (optional)
7-8 sprigs of chopped dill (fennel also works very well)
1 teaspoon of salt
For decoration,
Dill leaves
Red pepper flakes
Extra virgin olive oil
