🌼Salmon and Orzo with Avocado Salsa

I did not follow this recipe exactly!
I made a smaller batch of the salsa and then made the salmon and orzo how I wanted to!
Here is what I did:
-2 Wild caught Salmon fillets , skin on
-Season salmon with a little salt, pepper, garlic powder, and ranch seasoning!
Salsa:
-1 roma tomato cut up
-1/4 cup of red onion chopped
-1/3 of a cucumber chopped up
-1/2 an avocado chopped
-1 to 1 1/2 tbsp of a high quality olive oil
-1 tbsp of lemon juice
-1 tsp of minced garlic, fresh is best
-1 to 2 tbsp of feta cheese
-salt and pepper to taste
For the Orzo:
-1 cup of dry orzo
-1/4 to 1/2 cup of half and half or heavy cream
-1/2 cup of parmesan cheese
-1/2 tsp of garlic powder
-salt and pepper to taste
-OPTIONAL: 1/2 tsp to 1 tsp of lemon juice
Bake Salmon on 400° for 8-10 minutes! It needs to be 145°F.
🌼BBQ Chicken Roll-ups (8 wraps, may have leftover chicken and maybe make a few more)
-2 chicken breasts
-9 to 10 oz of bbq sauce of choice. Mine was Honey BBQ
-2 cups of shredded colby jack cheese
-chopped red onion maybe 1/2 a red onion for all of them
-1 package of tortillas
-oil for browning
Cook chicken on a low heat in the crockpot for 5 hours until the chicken easily shreds up. Wrap everything in a tortilla and brown in a skillet!
Served with some potato wedges made in the air fryer!
🌼COBB Salads Using Chicken Nuggies
-3 to 5 chicken nuggets per salad, cut up once cooked
(you can use any chicken! Nuggets, strips, or breasts etc…)
-1/2 a package of bacon cooked and chopped
-romaine lettuce, chopped
-iceberg lettuce, chopped
-red onion, chopped
-roma tomato chopped
-cucumber sliced
-avocado sliced
-hard boiled eggs, chopped
-feta cheese
-shredded mild cheddar cheese
-crutons
-dressing of choice
