I'll be interested to know how well the bags handle being cleaned and reused. I think Darrin Wilson mentioned they have an upper temp limit of 176F? So no vegetables...

Yep. That’s the upper limit. We’ve cleaned ours 3-4 times in the dishwasher. Still ok. Will need to check in a few months time.

We cried too. Love crispy skin. You can definitely leave it on, but had to demonstrate it for those who like it off.

This definitely looks cool and I like the recipes. Fish/seafood are some of my favourite things to sousvide because it takes no time and is easy to overcook with normal methods. I use the oliso which also has re-usable bags but I can certainly see how SealVax has some advantages especially in terms of space and more longterm re-usability.

Great job! I personally don't like reusable bags for Sous VIde. I just use rolls and cut to size. Thick teriyaki...yes!

I learned from a chef in Amsterdam to cook salmon by filling a ziplock bag with olive oil and whatever spices and herbs and salmon. Fill pot with hot tap water. Let sit for 15-30 minutes then cook on hot pan for 30 seconds per side and wow. Flaky juicy and tasty.

hi nice vid! wanna ask why do we still bake the salmon in teriyaku sauce even though its cooked? Can replace using a blowtorch instead?

Great question! Yes you can! We are only using the broiler. alternatively you can also do it in the pan. I left instructions... somewhere. Lol check out the link in the description. Unfortunately for the full recipe wouldn’t fit here this time.

With fish, I prefer to not vacuum seal, just a regular freezer ziploc and poach in a bit of oil or marinade and press out air. With salmon, 108F for 30 minutes is actually ideal, poached in chili oil, though instead of searing the skin on, remove the skin and put it between cookie sheets with parchment paper for 30min at 375F so it crisps without cooking the fish meat any higher.

If the salmon is first wet brined, the white stuff “albumin” will not excrete while cooking.

@@KindofCooking 1 tablespoon of table salt per cup of water. Brine the salmon for 20 minutes. Thoroughly enjoy your channel.

Thanks for the sous vide video, great job! It would be worth investing in wild caught salmon, tastes amazing, seems pointless to go to all this trouble with farmed tasteless salmon. Those white lines in the salmon are soy feed. You are what you eat after all.
