PINDI CHOLEY INGREDIENTS;
Chickpeas: 2 cups
Salt:
Baking soda:
Water: 2 litres for pot and 800 ml for pressure cooker
For Potli;
Bay leaf: 1
Cinnamon stick: 3 inches pc
Cardamom pods: 3-4 pcs
Cloves- 6-7 pcs
Garlic cloves: 2
Tea bags: 3 / tea leaves : 1 & 1/2 tbsp
For Pindi Masala;
Coriander seeds: 1 tbsp
Cumin seeds: 1 tsp
Black peppercorns: 1 tsp
Green cardamom: 1 tsp
Cloves: 1 tsp
Star anise: 2
Fenugreek seeds: 1 tsp
Kashmiri dried chillies: 5-6
Black cardamom: 2
Bay leaves: 2
Cinnamon stick: 3 inches
Red chilli powder: 1 tsp
Salt: 1 tsp
Turmeric: 1/2 tsp
Dry mango powder: 1/4 tsp
Kasuri meethi: 1 tbsp
Anardana powder: 1 tbsp
For gravy:
2 cups chickpeas water
1/4 cup ghee
Ginger: 3 inches root julienne cut
Green chillies: 5
Coriander: 1/4 cup chopped
BHAINGAN BHARTA ;
5 medium eggplants
For the baingan bharta
1/4 cup ghee/ oil I used ghee
4 large garlic cloves minced
3-4 green chili or to taste, chopped
2 medium onion sliced
4 medium tomatoes chopped
1 tsp cumin seeds
1 tsp red chili powder or to taste
2 tsp coriander powder
2 tsp salt or to taste
1/2 tsp turmeric
1/4 cup Coriander chopped
MUGHLAI MOONG DAAL;
2 large cup Green Moong dal, soaked for 4/5 hours
2 tbsp olive oil/oil
Salt to taste
1 tsp red chilli powder,
1 tsp Coriander powder,
1 tsp Cumin powder
2 tsp Ginger Garlic paste
1 litres of Water for pressure cook or 2 & half litres for normal pot cooking

1/2 cup Ghee
1 tsp Cumin seeds
1 tbsp Chopped ginger
1 tbsp Chopped Garlic
1 medium finely chopped onion
2 Green Chillies chopped
2 medium tomato chopped
1 tsp coriander powder
1 tsp turmeric
2 tsp Kashmiri Chilli powder
For Tarka
1/4 Ghee
2 tbsp Garlic
2 tbsp ginger
3 dried red chillies
3/4 curry leaves
