This dinner is quick and easy. Should only take 20 minutes or less to make.

Shrimp Sofrito
2 tbsp chopped parsley
18 oz pre-cooked polenta
2 tbsp olive oil
14.5 oz can diced tomatoes with green peppers & onions, drained
14.5 oz can fire roasted diced tomatoes
½ tbsp smoked paprika
12 oz x-large raw shrimp, peeled, deveined, tail on
½ tbsp minced garlic
Preheat sheet pan in oven at 450 degrees. Slice polenta into 8 rounds about ½ inch thick. Coat hot sheet pan with oil and place polenta on pan and brush with oil. Bake polenta at 450 degrees for 15 minutes. Broil on high 2 minutes to slightly brown the top.
Meanwhile, pat shrimp dry with paper towels and set aside.
Combine both cans diced tomatoes and smoked paprika in a saute pan over medium high heat and cook 5 minutes
Add garlic and shrimp to pan with tomatoes. Cook 5 more minutes.
Add chopped parsley and remove from heat.
Top polenta with shrimp and tomato mixture.
