We pickled 300 chicken eggs from our laying flock! We'll be selling the quart jars at market this summer!
STEAMED EGGS
- Start with washed, chilled eggs
- With 2" water in stock pot, use basket or rack to suspend eggs mostly above water
- Bring to steam, cover, and set timer for 19 minutes
- Transfer to ice bath, leave until fully cooled. Switch out water if neccesary
BRINE RECIPE
1 cup water
1 cup vinegar
2 tbsp sugar
2 tbsp pickling salt
SEASONINGS (1/4 tsp/ea)
Black Peppercorns
Red Pepper Flakes
Corainder Seed
Habenero Pepper Flakes
Dill
Garlic Powder
Smashed Garlic Clove
+ veggies of your choosing
