So, here's a bit of TMI; what you're making is Japanese soy sauce. Korean soy sauce typically requires 메주(meju) that is made with 100% soybeans because other ingredients such as barley and wheat (in harmony with koji), introduce sweetness to the sauce. (so 고추장(gochujang) version of meju often has other grains). In addition, the type of bacteria that makes these "370+ year soy sauce" is called 고초균(gocho-gyun), which is very different from koji and is the reason why koreans dry meju tied up with 짚(jip, dried stem of rice or wheat) because "jip" has alot of these little dudes. Either way, you'll probably make a delicious sauce but different from what you're attempting. FYI, Koji is fungus and gocho-gyun is bacteria.

Salt doesn’t age in the same way that organic substances like wine, cheese, or meat do. Salt is a mineral (sodium chloride), and its chemical structure remains stable over time, meaning it doesn't undergo any real transformation through aging. Unlike organic foods, it doesn't ferment, oxidize, or break down over time. Any changes that happen literally just mean there is less salt.

In Korea, sea salt is aged in onggi- clay vessels made for aging and fermenting wide varieties of foods. The sea salt ages in this Korean pottery the same way whiskey does in an oak barrel: the vessel imparts unique flavor compounds to the salt the longer it is left to age in the sealed pot. It’s not just plain salt sitting in a normal glass jar on a shelf in a warehouse somewhere, something is actually happening to change the texture and flavor of the salt.

@@MrHighRawearthenware, which is what onggi is, is fired at lower temperatures than other types of clay, and is therefore much more permeable. When sea salt is placed in an earthenware clay pot, sealed and stored appropriately, ambient moisture in the air will very slowly seep through the pores of the pottery and hydrate the sea salt, which will hold the water due to its natural humectant properties. You actually don’t want the air to be too humid leading to the salt accumulating so much moisture that bacteria can start to grow, so you will want to store the pot in a cool and dry place. This is why the process takes matters of years. Over this time, the hydrated sea salt will interact with the interior of the pot and form unique flavor compounds depending on a variety of factors, like what clay mix was used, what type of compounds were already present in the sea salt due to harvest location, if the onggi had been used for fermentation previously, etc. The longer the salt is left in the pot, the more these reactions will take place and the more complex the combination of compounds will become.

@@SmoothBaracuda well not exactly. when its in water NaCl splits into ions to g be soluble so if you harvest salt from seawater it forms salt while drying up. so as a molecule its just as old as when the crystal forms
