Kia Ora Andy. Loved this. Food is always good but so is the genuineness. Where’s all the plates, burning the butter, always with a laugh and a smile. It gives the confidence to not make cooking too serious and it will all still be fine and perfectly delicious anyway.

If you want your whites to cook on time, once they're set on the bottom, toss in a little bit of water and throw a pot lid over them. Speeds it up but will give a slight film over the perfect yoks. If you need truly yellow yolks, suffer. 😉

I also love the idea of 5 minute recipes. Everyone's baked. Excuse why they can't eat something healthy and fresh is because they don't have time. and then they grab a bowl of cereal or a pop tart... There's even recipes that you could make a headache that could easily be heated up quickly in the morning, like omelet cups in a muffin pan.

I was brought up to address dash of milk to my omelets, as well. "Makes 'em creamier" my mom and grandma used to say... (Mind you, my grandfather was the town butcher. They had s farm with mom's folks, 9 kids and 2-3 hired hands at the table, 3x a day, every day. Grammar basically ran a restaurant out of her kitchen and started cooking at 4am and didn't stop until 7pm. Breakfast was every type of meat, oatmeal (grandad said it was the only thing that stuck to hisribs), eggs 3 ways, fresh biscuits and bread. Mom and dad opened a restaurant and my uncle and his family had the town grill (northern, was "the bbq" which opened in 1955 and ran 'til 2015, not a bad run. I think they knew just a little bit about cooking. I was in the kitchen with mom for all my years growing up and I took what I learned from them and worked at the OK Café and Bones Steakhouse, two of the top places in Atlanta. I've earned the right to add a splash of milk to my eggs. 😉
