You are correct but you didn't say why. Wet does not like to stick to wet and dry does not like to stick to dry. This is why you put (wet) meat in (dry) flour before you put it in (wet) egg (the binder) then the (dry) dredge. Alternatively you can put it back in the egg then dredge again.

In Italy we don't use egg in the "breading" part. We use just starch, and not either starch+water. We don't use that, because a big and flavoured coverture, just like tempura for example, will cover the taste of the calamari. And we don't want they taste like a zucchini tempura.

Have never seem calamari with weird dipping sauces. We love dipping them in vinegar with sliced chilis onions and ground pepper. No need to drizzle with any zest because the vinegar is already tangy.

Level 3 chef used calamari not squid. The fins of the calamari run all the way down the fish and squid fins are at the bottom of the body. Calamari’s has a finer and more delicate texture

As someone that appreciates science/“different levels” please stop merge editing the clips together because it’s starting to be four people cook the same dish the same way. Have your editors focus on the differences rather than the similarities! It’s supposed to be “different” levels, not “look at how we all do it the same”

The first guy skipped dredging in flour before the egg, that's why the crumbs slid off. Shallow frying in a pan means the oil lost it's temp too quickly, which would've stewed the squid before it got crispy. Deep frying ensures a quicker cook and more tender squid. Rice flour is also great for fried squid

to ensure if you do john recipe that the egg and bread crumbs stick to the calamari, before dredging in the eggs, dip them in flour, the eggs will stick better, and therefore the breadcrumbs too!! :)

Sorry Daniel, but frozen is often better than fresh (for any food). With seafood it is flash frozen on the boat as it's caught. With produce, it's flash frozen at it peak. The myth that frozen is inferior is outdated and kinda snobby tbh.

Pretty sure there's no such things as "fresh squid" unless you live in a port city and go to the seafood market by the docks. Anything in a supermarket will have been previously frozen, same as shrimp, lobster tails, etc. So, "fresh" is not "always better", most of us are just paying the store to thaw it for us.

I think the second guy used fresh to mean unprocessed/whole squid. In a commercial sense, fresh only dictates not frozen (so for example, "fresh produce" can be picked unripe and stored for quite a while before going to market) But I get your point also
