You really have to specify in California and Texas. There's a shitload of authentic Mexican food in both places. There's also texmex and Baja and other americanized. It's not like Indian/etc (Desi is Indian right? Sorry if not) in the UK. Here in Houston 30-40% of people are Mexican. Mexicans by and large love texmex just like white folk love that authentic food. We know the difference haha

Oh you have no idea. People from outside the US view "American food" as hot dogs, hamburgers, and whatever fast food restaurant made it overseas. Those exist no doubt but, especially in the US major cities you get an absurd variety of cuisine. And every city has hundreds of god teir mom and pop food. And then you add to the diversity of the immigrant culture that has amassed over a couple hundred years and you get both authentic food and brand new creations. Like this show. You have authentic, not just Mexican tacos, but Tijuana Mexican tacos. And you can get tons of regional Mexican food in the western states. And take the last guy who is creating a new food massively influenced by a type of food. And you can go to New Orleans with creole cooking, Texas with it's Tex mex and BBQ. Well everywhere does it's style of bbq. Truth is you can go to fast food. I went today and got a burger. But you can also go to thousands of mom and pop or small joints that serve just great food. I often laugh when I see KZitem visitors to the US that go home and say "you can't get this in in the US." Well yeah, cause you only went to Fricken walmart. If you look hard you can find many things. It just takes some work.

There’s a book published in 1831 called "Cocinero mexicano", in which the recipe for a quesadilla does not contain cheese. Also, in a spanish dictionary from 1737, the quesadilla is actually a dessert (with no cheese). These are semantic changes for the same word, so it’s very valid, and normal, for people from Mexico City to have quesadillas with no cheese.

@@johnponce8759 it's mostly a regional thing. I've traveled up and down the Baja. And the other side of the sea of Cortez down to Puerto Vallarta. Things can change drastically sometimes city to city even. And dialects are so different, that their version of Mexico is usually the only version they know. And I do recommend anybody to try traveling by road. You meet so many great people. Just don't ask to many questions.

I saw an episode of breakfast burrito. I've always cooked the egg and then taken it out and put the wrap into the pan and the eggs/cheese/etc in. In this episode, they just throw the eggs in and while it is cooking, you put the wrap on top of it so it finishes cooking and attaches itself to the wrap. Then you flip it over and add in whatever you're gonna add (cheese, veggie, ham, bacon..whatever). This episode pretty much put me in the same spot with the cheese. Put the cheese in first, let it start to char, and then put the wrap on top of it. Boom, instantly better.

I think they are all like fusioned or mutilated quesadillas. No cheddar, no mozarella ( I've seen some people use it... this is not Italian! ), no blended! Queso Oaxaqueño is the only one! Looks delicious, but it is NOT quesadilla...

I was born and raised in Mexico City and I can confirm that quesadillas don't necessarily need cheese to be considered one. They're not tacos, you need to see and taste them to know the difference. Saludos

Ximena Sánchez the word quesadilla comes from the Náhuatl word quesaditzin which means “folded tortilla”. I learned this about 2 weeks ago from some friends that are from Querétaro, Mexico. Yes, I was mind blown too because I grew up thinking the word quesadilla came from “queso” 😐 But now I know that a quesadilla in many parts of Mexico actually doesn’t come with cheese and you have to ask for it if you want it
