Okay here's an idea! Add Rie's boozy strawberry to Andrew's Parfait, top that up with Alvin's Strawberry Milk and garnish the whole whole thing with Inga's Fruit leather strips! A good name for this would be Death by Strawberry!

My family also does Alvin's version but with a twist. A family "recipe" We mash the strawberries (leaving in some chunks), and instead of turning it into a compote and adding sugar, we simply add condensed milk already (no milk necessary at this point) and mix it together And then top it off with ice. Leave it in the fridge to chill, or you can put it in the freezer for a couple of hours if you want it to turn into sort of an ice/cream or sorbet type of texture. We do it every summer and it's always a hit.

An audible “yay” everytime a new video comes out ! I think anyone really into cooking would love Manresa’s strawberry gazpacho and fig leaf curd. It’s savory sweet and vegetal with both a crunchy and smooth mouthfeel. If nothing else, the cookbook is gorgeous. Thanks for all of the great recipes!

always love to see the creation of you guys!! by the way, about Andrew's stand mixer, there's a way to adjust the gap between the whisk and the bottom of the bowl by tightening/loosening the screw at the hinge between the head and the body of the stand mixer. hope it helps 😊

In times when I could eat strawberries I loved to make strawberry milk like Alvin did. I thought everyone knew that’s how you make it. But sometimes I just blended raw strawberries and milk and that’s yummy too. Love all of you guys 🥰

Although Japanese people are usually very meticulous and we measure every single thing specifically, the recipe Rie-san uses was so rough! I know it’s a Japanese guy’s recipe but it seems to be more like grandma’s recipe! Would love to try the strawberry cocktail 🍓❤️

I use a egg crate to store my strawberries this way they don’t touch and bruise quickly. They last double the time in the fridge. 💛🍓

Love what Andrew made! That Strawberry Parfait looked delicious! Impressed with all the efforts he made to making it! 🍓🍨 Inga's Strawberry Lemon fruit roll-up looked good too! My favorite recipe that has strawberries in it is my homemade Basil Gelato with Macerated Strawberry and Balsamic - Red Wine Glaze with Creme Fraiche and Shaved Semi-Sweet Chocolate. This is an adapted recipe from Chef Michael Chiarello who made this on Top Chef Masters on Bravo. Not sure if the recipe still exists online.

Oh strawberry milkshake is made similarly at my home too. We candy/jam the strawberries in winter, & then just put it in milk, & sometimes replace 1/3rd of the glass quantity with vanilla ice cream, & then blitz it in Mixer. Comes out nice & thick & natural pink. You can do the same with mangoes & chiku too. My grandmother makes candy preserve of peaches too but we only use that in ice cream, but it might be a nice addition to ice tea.

For the KitchenAid, if you unlock and open it, there's a screw there to change the depth of the utensil, so you can make it go deeper if necessary.

I usually make like a strawberry pie sort of. It's a pie crust in the bottom and then you melt chocolate over that, add marzipan in a thin layer when the chocolate has hardened, sliced strawberries and then an elderflower whipped cream. Super nice for summer!

Tip, if you're making the strawberry milk cut up the fruit thinly and cover with sugar then leave overnight (generally something you can do with most fruit for jam) It's also yummy to put on ice-cream just like that

You can adjust the height of the tilt head on the mixer by tightening the screw on the front panel of the machine. There are videos online of how to appropriately adjust the height so as to not ruin your attachments.

Andrew, there is an adjustment screw on the kitchenaid mixer that lets you change how far down he mixer sits into the bowl. When you tilt the mixer back, you'll see the little screw underneath!

Rie's recipe reminds me of something my mom used yo make for me and my sister when we were young. She would cut up strawberries and mix them with water, sugar and a little bit of alcohol. I think it was cognac or brandy I am not sure. She put it in the fridge to marinate. I remember eating this and loving it the taste was amazing. I never thought of doing it this way, I will definitely try it. Also Alvin's recipe looks absolutely delicious. And I think it's a, way of making milk better, I personally don't like to drink plain milk.

Rie, try this method for coring strawberries. Remove leaves. Hold the knife by pinching the blade close to the tip with your thumb and index finger. Other fingers should hold the handle. Hold the knife steady and move the strawberry around it cutting a circle. Since your thumb is locked in place near the knife point, you cannot push through the strawberry on accident and cut yourself. Works for other trimming chores as well.

I’m just surprised they’ve only *heard* of Bird’s custard powder🤣 It feels like an important item in the Malaysian home baker’s household. It’s used a lot in making biscuits, I usually use it to shortcut custard, aaand sometimes if I’m out of cornstarch for fried chicken, I substitute that with custard powder instead🤭

To Andrew and Rea: you can lower the head of the kitchenaid so it reaches the bottom of the bowl. Not sure but I think it has something to do with the black screw on the left side of the head. Google should help!

I would do these: 1. Salt the strawberries then put them in dehydrator until they are half dried and become chewy. Cut them into small cubes and use them in chili crispy sauce like how Lao Gan Ma used dried salted radish. Then use this condiment in cucumber salad or something. 2. The easiest probably to use strawberry purée for making sweet and sour pork. 3. Make a mean strawberry salsa to eat with pan fried fish. 4. Use strawberry jam as part of the sauce for fruit salad. I prefer to use jam so it will not be too watery. 5. Smoked the strawberry with fruity wood chips. Then use it as a topping for a bruschetta.

i hope Andrew sees this comment. i am a trained pastry chef, and although it's not advised we do a 'similar method' we just drop the whisk so it touches the bottom of the bowl. the whisk should still be touching the notch, but it isn't locked. and it works really well.

What we do for our strawberries, we cut it up, put some condensed milk and some nestle cream. You chill it for 4 hours, you have a creamy dessert. ❤❤

When they were talking about buttercream, they were confused as to what type of buttercream. Just for future reference this is an Italian buttercream as you make an Italian meringue (hot sugar syrup into egg white) and that is the base. A swiss buttercream starts with a swiss meringue (sugar into egg white over a double boiler and whisked together until sugar is dissolved and its frothy, then beaten to stiff peaks). Both are the same from that point.
