Yellow birth stone is topaz some call it citrine. It’s November birth stone I know cause it’s my birth stone lol it looks a little darker to me. Sounds like it’s getting better tasting 👍 thank you for sharing as always yous are amazing.

I just got a 3 liter barrel for my birthday last week. It's been curing for a week and I'm goin to get my white dog today to start aging. These videos are awesome for what to expect. Really enjoying the series so far!

Thank ya, Michael. Which White Dog did you decide to use? The one thing I've learned so far is this whiskey changes quickly and often. It's a bit of a roller coaster ride right now.

I'm glad your experiment is producing enjoyable results so far. Buffalo Trace does not disclose their exact mashbills, but their mashbill 1 in this case is low rye (under 10% I believe). Cheers to the both of yous 🥃🇨🇦🇺🇲

Now I'm intrigued about this project of yours. Honestly, I thought these were more of a neat little gimmick that barrel companies do. But I'll be if this doesn't seem like it is well on its way to be a bourbon just like the rest. I can't wait for the next one!

New make can bring out new flavors lol. We have two new experimental batches going right now. An Ironroot blend and we have 10 gallons of single malt aging at Blackland Distillery down in Ft. Worth.

I have heard that this size barrel takes 3-6 months to age well but your liquor is aging more quickly. Are you storing this in a warm, hot, cold, cool area??

Hoping someone can help me with some questions. Does this need to be down proofed once aged? I’m using the same white dog mash. 125 proof bourbon seems a bit high so I’m assuming it needs to be down proofed but I’m not sure if the aging process accomplishes this or if I add water in the right proportion to get to the desired proof. If the latter, do I add the water after the aging or before (do I put a mash/water mix in the barrel)? Thanks for being patient with noob questions. This is fascinating.

Hello there, Jim. Each distillery does it differently. As an example, Rabbit Hole proofs their whiskey down to 45 ABV and allow it to age back up to 50 (ish) ABV then proof it down again to 47.5. But the vast majority of distilleries age it and add water just prior to bottling. I will say that one great benefit of adding water at the start of aging is that it allows you to save money. 5 gallons of Buffalo Trace white dog is quite the financial commitment. Adding water helps to fill the barrel and save a bit of money. We always age without water ourselves. I hope that helps and have one for us! Cheers.

i have 2 barrels going right now with Still Austin new make in them. I put them up two weeks ago and was wondering how many bottles did you put in your barrel.

We put two 375 ml bottles in. The next spirit we do, we'll do the full 2L. I'm wondering if we left too much of the whiskey out of contact with the wood so we will fill it up on the next experiment.

Hey there, Scott. We are still aging whiskey. Currently, we are aging two five gallon barrels with a single malt and one 2 liter barrel with a white dog blend from Buffalo Trace and Ironroot.
