Zarand bread is a native Iranian bread with a history dating back thousands of years. This bread is traditionally baked in the Talish regions of northern Iran and is known for its unique flavor and taste, which holds sweet and nostalgic memories for the Talish people.
نان زرند، یک نان بومی تالشی و ایرانی با تاریخچهای چند هزار ساله است. این نان به صورت سنتی در مناطق تالش در شمال ایران پخته میشود و از طعم و مزه خاصی برخوردار است که برای مردمان تالشی شیرین و پرخاطره است.
The dough for Zarand bread is made from ingredients such as wheat flour, water, and salt. The ingredients are carefully mixed, and then the dough is allowed to rest for approximately 30 to 60 minutes. This resting stage allows the dough to increase in volume, roughly one to two times its original size, and become light and soft.
خمیر نان زرند از موادی مانند آرد گندم، آب، نمک تهیه میشود. مواد خمیر با دقت مخلوط میشوند و سپس به مدت حدود 30 تا 60 دقیقه استراحت میدهند. این مرحله استراحت به خمیر اجازه میدهد تا به طور متوسط بین یک تا دو برابر حجم خود بزرگ شود و سبک و نرم شود.
Then, the inner filling, which is the most important part of this bread, isprepared. To make the filling, animal oil is heated and then sugar and flour are added to it. These ingredients are heated together to ensure they combine well.
سپس ماده داخل نان، که مهمترین بخش این نان است، آماده میشود. برای تهیه ماده داخل نان، روغن حیوانی را گرم میکنند و سپس شکر و آرد را به آن اضافه میکنند. این مواد روی حرارت قرار میگیرند تا مواد به خوبی با یکدیگر ترکیب شوند.
Next, the prepared filling is added to rounded dough portions, and they are pressed together to ensure the filling is fully incorporated into the dough. The dough is then spread out, and on top of it, milk and cream are applied to give the bread a golden color when baked.
سپس ماده داخل نان را به خمیرهای گرد شده اضافه میکنند و آنها را به هم میچسبانند تا ماده داخل نان به طور کامل درون خمیر جا بیفتد. سپس خمیر را پخش میکنند و روی آن شیر و خامه میمالند تا بهنگام پخت رنگ نان طلایی شود.
Finally, Zarand bread is placed in a special clay oven that has been preheated with wood and charcoal. This process results in the bread acquiring a shiny golden color. The distinctive taste and aroma of Zarand bread, as a renowned and sweet bread, have turned it into a cherished memory for the Talish people.
در نهایت، نان زرند را در یک تنور سفالی و مخصوصی که پیش از آن با چوب و هیزم گرم شده است، قرار میدهند. این عمل باعث میشود نان به رنگ طلایی درخشان درآید. طعم و عطر خاص نان زرند، به عنوان یک نان شیرین و معروف، آن را به یک خاطره خوشایند برای مردمان تالش تبدیل کرده است.
