I have now collected over 100 knives, plus tomahawks, axes, machete's, axes and even a few swords. Oh, and I just bought a new axe. Its hard to stop once you head down the slippery slope. But I have been collecting since the mid 80's. I am trying to stop, I really am!

For chef's knives, its a valid test. My son loves to cook, so I bought him a high end Japanese chef's knife for his birthday earlier this year. It was shaving sharp right out of the box, and he was amazed that is fell through a tomato without pushing it down or moving it back and forth. He's used it nearly every day since March and it still hasn't needed sharpening! Now, for my pocket knives, I don't care if they slice tomatoes!

I swear honey, this handmade knife was only $50. I don't know know how the guy does it. Most would charge more. Guess I'm just finding these little know makers that no one knows about and just getting a good deal. Lucky me. On a separate note, just had to refinance the house again. Again? It's the 9th time. And they all seem to line up with you getting a new $50 knife. Wow, what a coincidence. That's crazy.

To my understanding To get an actual accurate test on the sharpness tester you need to go as slow as possible which almost nobody is doing, and do it 3 times to get an average it's very easy to get 1 great number and another much higher.

Exactly that! I also always do the phone book paper test as the bess tester only covers a tiny fraction of the edge. A sharp edges with a lot of bad Spots would still suck in real world use

Some of the US brands that outsouced to China had the Chinese make them the lowest cost blades possible knowingly sacraficing quality in order to make high profits on their budget knives. In other words the US company selected or accepted low quality. People unfairly blame the Chinese for that low quality, but it really is the brand that lowered their QC standards.

It’s not lowering QC when the product the American brands paid to be manufactured is of low quality/cheap. The Chinese manufacturers are just making what the brand specified them to make, i think some people just refuse to believe their favourite American brands make the deliberate choice to screw over their customers to make more money.

In China products have been manufactured at the highest level for years and of course junk is also produced, but that is not only the case in China. In the knife sector, there are manufacturers such as Maxace, Kunwu, Reate and Rike who are among the best in the world and other manufacturers such as WE, Kubey, Kizer, etc. also deliver very good quality and are constantly getting better. In China these days, you can practically get the quality you are willing to pay for.

Good points on toughness! As much as I love JoeX and his destruction videos (he’s the reason I own an Ares), how well a knife will withstands being BRUTALLY smashed against a car door, rocks, iron rod, etc is only a small piece of the puzzle. Failure point is good to know, but the comments in his videos when a knife finally breaks are so often “it sucks because it broke!” In a video titled “until it breaks” 😂

Try breaking a tops knife or a trc knife whit only doing the wood tasks and whitout hitting metal and stones😅. In real life the tiptest he does is important and as I understand the apocalyse did very well on that for example. But I own 2 wtg ares because of joe just to set the record staight😂

Facts. If you want to test your knife against a phone book in the US, you will be arrested by museum security and your family will wonder why you are trying to deface historical relics. Also, lol at their authenticity. I dont trust people who spend time selling me on why they are genuine in between a ton of ads. The current path of grifting prosperity is always lined with the bodies of previous grifters. These guys grift. I know it when I see it. Some seemingly sincere and newer channel will expose them in a few years - it’s not a question of if, but when. I love youtube!

5:50 There is also a lot of difference with plastic bottles. Carbonated drink bottles are often much tougher to cut through, and those big milk bottles you often see in the US are especially easy because it's not the same plastic.

@@JosephOlson-ui2pgto a certain degree that is indeed true if you have a shallow angle anything for 14-17deg they’re not massive on keeping that fine edge. Where as 17-26 you can go higher but honestly I stick to 18deg on a working knife or 16-17deg on a nice but not heavy duty blades. I hope this makes some sense for you 🫵🏻👍🏼

Earlier this year I bought the Eafengrow EF125, made in China, 40 Dollars. And it is a very nice knife. Made from something called 14c28n stainless steel. With G10 handle scales and red liners, with a kydex sheath, and a Tech Lock esqu type of belt clip. So far I've only used it in the kitchen, but I really like the looks of the knife and how it feels in my hand. So do not Poo Poo all Chinese made knives. Yes, some are crap, but every so often you find a flower in the crap :)

I like Efengrow knives too , I prefer the D2 steel versions , and would definitely buy more in the future I currently own 3 knives from efengro , Im sure I mangled the spelling but you get the idea 💡 . I agree with your statement 👍

Eafengrow makes some SENSATIONAL fixed blades 2 I personally recommend - EF131 DC53 blade steel ( D2 variant less edge retention more toughness and corrosion resistance. EF146 Sleipner steel ( D2 variant that went GOD mode honestly dont know what they did to it but geeeeeesh ) havnt sharpened it yet but processed wood with it on my last 12 camping trips and i can still shave with it , just insane.

I think the biggest lies are 'this one knife can do it all' survival knife hype, carbon steel is better than stainless steel, supersteel is better than traditional steel, that knife is good because it has lifetime warranty, etc. I think China will take over a lot of the market. I really like the ergonomics of the ESEE RB3 Bolieu Camp-Lore (165 euro) but 1095 carbon steel and a leather sheath are useless for what I do and where I travel. I found the Chinese made Brother F006 (30 euro) and it's the same model but with a strong kydex sheath with very good retention and made of 440C stainless steel. That's more like it for me.

I watch DBK a lot. I have found out about several knife make and model only because I saw it on DBK, like UG Tools TiNy Floe and Falkniven NL5 in special Cobalt Steel. Oh, and LionSteel T6 in K 490. But after all is said and done, I watch for fun and make my own choices and thinking the way Maarten and Mikkie B do and how their viewers do.

I’ve spend many years on free hand sharpening techniques. To me, I realised best sharpened knives are those which cut paper towels and toilet papers in one line easily. Way better than papers, flyers, hairs, beards and any other means. The result talk really precise about desired sharpness. And there are many ways to get to get to this edge. Phone books are not a common item in America these days , to test my sharpened knives I do push cuts thru a paper towel , I push the point thru then try a push cut only a razor sharp knive can perform this task .

Years ago I got a kellam puukko and it change my view of sharpness... it cut sticks clean and if you touched the edge it would pop your skin like a balloon....

Buck knives outsourced blades on certain models to China , with Made in China on the blade. After realizing the Dylan Mulvaney / Bud Light effect on their sales they immediately apologized to the American public and started making their blades in the U.S. once again. I have a Stockman with the Chinese blades.

From my experience with those BESS testers: There's a human element to it that can't be eliminated, so those numbers that people get are pretty much only comparable to the other tests that they've done themselves, it's not empirical data. Using the spool rather than the clips is one variable, and very importantly is the speed at which you push the blade into the filament. For me, since I've used one quite a bit, it was neat at first to use it to judge how sharp a new knife was (compared to others I tested myself). But I end up reprofiling/sharpening almost all of my knives to give them a fair shake. It's real easy to and common to come across a funky temper at the edge since virtually all production knives are belt sharpened. The faster the belt speed, the faster a worker can sharpen a knife, but more heat is produced. Tons of knives with modern steels have a low temperature temper, so it's not visible via discoloration if a temper at the apex is weakened, but heat dissipates quick so it doesn't really crawl up the blade unless there was an egregious oopsie. Resharpening a knife can usually remove that "fatigued" steel that got too hot. What made the BESS tester useful for me though, was being able to assess my freehand sharpening and stropping techniques to see if I was improving.
I have a Tops Sgt Scorpion and I have to say it's by far the toughest smaller fixed blade I have ever used. Having bradford esse winkler spyderco spartan fixed blades in my collection

My 25+ year old Chinese Kitchen butcher knife is still razor sharp today and it has only been maintained on a honing Steel for over 25 years. I bought it in a Chinese butcher shop where they sold high quality Chinese knives. They have been making knives for thousands of years.

Skeletonizing weakens the knife tang. Check out the video of the broken BK2 called, "Repair a broken BK2". That is what made me buy the Esee5 after thinking the BK2 was indestructible.

I've found that slicing or push cutting tissue paper is a great test of razor sharpness, also cutting receipt paper at a very acute angle. Only my sharpest knives can push cut receipt paper at less than 10° over the angle of the apex, anything else just glances off. Another good test that I've only just started getting to the level of sharpness needed to cut it is slicing and push cutting an unsupported paper towel. There are so many unconventional things that give you good (albeit somewhat subjective because materials vary) measure of sharpness.

I've never liked people showing me a paper test, I prefer to cut paper myself so I can feel what the blade is doing. That's the basic idea behind doing the paper test, it's more about feeling the blade cut, rather than seeing the blade cut.

JARS knives are Made In China. And they are pretty good. Also the knives of Matthias Busch and Reini Rossmann (working together with Sergej Jarygin from JARS) are made there. But of course, they have their prices. I think they are worth it. Would be nice if you could test some of them. (Before the German Law is renewed, and allowed knives will only be 6 cm long 😂😭😭😭)

On the spool people can just spool on like 6lb or 4lb fishing line or braided line. If it isn't a clip you can't know if it's the real filament so that voids the test. Using fast speed to push the knife thru it will cheat the test hugely.

The sharpness tester has to be used with the proper wires, with proper (i.e. absolutely minimal) speed, and doing it at least three times, and using the average (also, it only tests push cuts. Not slicing) ...and cutting paper also depends on not just the type of paper, but also the speed/force you use, as well as whether you're cutting with or against the grain of the paper. And the important thing isn't just whether it cuts, but how cleanly it cuts. All of that (aside from grain) also applies to cutting tomatoes.

as someone who uses my knife as a sharpened prybar as often as a cutting implement, a strong knife is the only good knife for me: if i can't split a log or pry my truck's stuck tailgate with it while still being capable of chopping veggies and cutting boxes i don't need it
