Recipes :
Schezwan Fried Rice
Preparation time: 5 minutes
Cooking Time: 5 minutes
Serves: 2-3
Ingredients:
2 cups leftover rice
2 tbsp oil
Salt to taste
1 tbsp chopped garlic
2 tbsp schezwan paste
1 tbsp chopped spring onions
1 tsp white sesame seeds
2 eggs (optional)
Method:
Scramble the eggs (if using) and set aside.
Heat oil in a pan. Add the chopped garlic. Sauté till golden. Add the schezwan paste, rice, salt to taste and mix well. Add scrambled eggs, spring onions, garnish with sesame seeds and serve.
Desi Chinese Fried Rice
Preparation time: 10 minutes
Cooking Time: 5 minutes
Serves: 2-3
Ingredients:
2 cups leftover rice
2 tbsp oil
Salt to taste
1 cup chopped carrots, beans, capsicum
½ cup sliced onions
1 tbsp chopped ginger
1 tbsp chopped garlic
1 tsp soya sauce
1 tsp vinegar
1 tsp pepper powder
Method:
Heat oil in a pan. Add the chopped garlic and ginger. Saute till golden. Add sliced onions and saute till translucent. Add chopped vegetables and saute for two minutes. Add remaining ingredients, toss well and serve.
Herbed Fried Rice
Preparation time: 5 minutes
Cooking Time: 5 minutes
Serves: 2-3
Ingredients:
2 cups leftover rice
1 tbsp oil
1 tbsp butter
¼ cup chopped onions
½ cup corn
3-4 salami (optional)
Salt to taste
1 tbsp mixed herbs
1 tsp chili flakes
1 tbsp chopped parsley
Method:
Heat oil and butter in a pan. Add the chopped onions and saute till translucent. Add the cron kernels and cook till softened. Add shredded salami (if using) and toss well. Add the rice, salt, pepper, chili flakes, mixed herbs and toss well. Garnish with chopped parsley and serve.
South Indian Style Fried Rice
Preparation time: 5 minutes
Cooking Time: 5 minutes
Serves: 2-3
Ingredients:
2 cups leftover rice
2 tbsp oil
Salt to taste
1 tsp chana dal
1 tsp urad dal
3-4 dry red chilies
1 tsp mustard seeds
8-10 curry leaves
¼ cup peanuts
¼ cup lemon juice
Method:
Heat oil in a pan. add the chana dal, urad dal, mustard seeds and saute for 2 minutes.
Add the whole red chilies, curry leaves, mix, add the peanuts and saute for 3-4 minutes. Add the rice, salt, turmeric powder and mix. Add the lemon juice, mix and remove from heat. Serve.
Masala Fried Rice
Preparation time: 10 minutes
Cooking Time: 5 minutes

Ingredients:
2 cups leftover rice
2 tbsp oil
Salt to taste
1 cup chopped carrots, beans, capsicum, corn
1 tbsp chopped ginger
1 tbsp chopped garlic
1 cup chopped tomatoes
½ cup sliced onions
1 tbsp chopped ginger
1 tbsp chopped garlic
2 tbsp pav bhaji masala
Method:
Heat oil in pan. Add the onions and sauté till golden. Add the pav bhaji masala, mix add tomatoes and ½ cup water and cook till tomatoes soften, add the vegetables and cook for 3-4 minutes. Add the rice, salt to taste, toss well and serve.
