📌Cranberry Apple Casserole Recipe:
(for the fruit filling)
-2 Cups of fresh Cranberries
-5 Granny Smith Apples
-3/4 Sugar
-1/2 Cup Brown Sugar
-1 Tbsp Orange Zest
-1 Tbsp Flour
(for the Oat Crumble Topping)
-1 1/2 Cups Quick Oats
-1/2 Cup Flour
-1/2 Cup Brown Sugar
-1/2 Cup Chopped Pecans
-1/2 Cup Butter, melted
***Bake at 350 for 45 - 60 minutes, until fruit is tender and bubbly, and the top is lightly browned
📌Cheese Broccoli Rice Casserole Recipe:
-3 Tbsp Butter
-1/2 an Onion, finely diced
-1 1/2 tsp Minced Garlic
-2 (12oz) bags of Frozen Broccoli Florets, THAWED and chopped into bite size pieces
-4oz. Velveeta Melting Cheese, cut into small cubes
-1 can Cream of Chicken
-1/4 Cup Sour Cream
-3/4 Cup Milk
-3/4 tsp Salt
-1/2 tsp Pepper
-3/4 tsp Garlic Powder
-3/4 tsp Oregano
-1/2 tsp Paprika
-1/4 tsp Mustard Powder
-2 to 3 Cups Shredded Cheddar Cheese, divided
-2 1/2 Cups of Cooked White Rice
***In a large saucepan, add butter and onion and sautee until the onion begins to soften. Then add in minced garlic, thawed chopped Broccoli and Seasonings. Cook on med/low for about 10 minutes, just to soften the broccoli up a bit. Next, add in cubed Velveeta Melting Cheese, Cream of Chicken Soup, Sour Cream and Milk. Continue to cook until the cheese is completely melted. After that, add Cooked White Rice and stir to combine. Remove from heat. Pour mixture into 9x13 baking dish. Top with Shredded Cheddar Cheese. Bake at 350 for 35 to 40 minutes, or until that top is slightly golden brown. ENJOY!
📌French Bread Corn Pudding Casserole Recipe:
-3 Tbsp melted Butter
-2 (15oz) cans of drained Corn
-1 (15oz) can of Cream Style Corn
-6 strips of Bacon, cooked and crumbled
-1 Cup of Milk
-1 Cup of Heavy Cream
-4 Eggs, beaten
-1/4 Cup of Cornmeal
-2 tsp Sugar
-1/2 tsp Salt
-1/2 tsp Pepper
-1/2 tsp Garlic Powder
-1/2 tsp Onion Powder
-1 tsp each of Thyme, Parsley and Italian Seasoning
-8oz. of French Bread from a loaf, cut into 1" cubes
-1 1/2 Cups of shredded Colby Jack Cheese
-1/3 Shredded Parmesan Cheese
***Preheat oven to 375 degrees. *In a large bowl add melted butter, drained corn, cream corn, cooked and crumbled bacon, milk, heavy cream, beaten eggs, cornmeal, sugar and seasonings. Whisk to combine. Add in cubed french bread and cheese then toss to coat bread in the milk/corn mixture. Let stand for 30 minutes. This gives the bread time to absorb some of the custard. Then pour into large, 5 quart, 9x13 baking dish and Bake at 375 for 45 minutes or until the top is set and golden brown. ENJOY!NOTE: Feel free to add more cheese to this. I keep it at only 1 1/2 Cups, because some of us eat it like dressing, and top with gravy.
