Tilting the head forward is done to prevent the swimmer from going vertical with their back when breathing. If you can isolate the breathing movement to just the head, instead of bringing your entire lower back into it, you will be able to lay flatter in the water and use more power to go forward instead of up. This will effectively mean you wont have to take as many strokes as to if you were to go «deep», as you mention, where you would have to take more strokes and therefore bigger effort. To do this effectively you have to be flexible enough in the shoulders, lats, and lower back. If youre stiffer in those areas it will be harder to isolate the movement to just the head. This can be seen in for example phelps, where he was freaky flexible in the lats. You however also have to be strong enough, which is why many kids struggle with it. It therefore sounds like you arent flexible enough in the lower back to swim butterfly most efficiently.
