Chocolate Mousse Cake
If you're looking for the perfect chocolate dessert, look no further! This chocolate mousse cake is super easy to make with only 6 ingredients, light and airy in texture.

Chocolate Genoise Sponge Cake:
2 large eggs
¼ cup or 55g sugar
⅓ cup or 40g self-raising flour
1.5 tbsp or 10g cocoa powder
Mousse:
600ml heavy cream
300g dark chocolate, you can use milk chocolate, if you prefer
Cocoa powder for dusting
Directions:
1. Pre-heat the oven to 175C and prepare a 9x9" pan with baking paper.
2. Beat the eggs and sugar for 3-4 minutes.
3. Fold gently the flour and cocoa powder, pour it into the pan and bake for 12-14 minutes.
4. Whip the cream, then take 1/3 of it and keep it in the fridge.
5. Melt the chocolate and add that to the rest of the cream. Mix well.
6. Take the same pan you baked in and line it with 2 sheets of baking paper going in opposite directions. These will allow unmolding the cake.(In the video I used acetate sheet, but baking paper will work just fine).Place the cooled cake inside, and then pour over the chocolate mousse and the whipped cream from the fridge.
7. Chill the cake for a couple of hours or pop it in the freezer for 50-60 minutes.
8. Dust with cocoa powder and slice into individual servings. Store in the fridge!
