INGREDIENTS + NOTES
#1 Cold Noodles 0:27
for the tofu:
200g firm plain tofu (7oz)
1 tbsp flour
1 tbsp veg oil for the pan
1 tbsp soy sauce
1 tbsp white wine vinegar
1 tbsp ketchup
optional 1 tsp vegan worcestershire sauce
optional 1-2 tsp sesame seeds
1 serving cooked noodles
→ I did 200g fresh packaged udon noodles, which translates to about 100g dry noodles I’d say! Sub with rice noodles, glass noodles, soba, or even spaghetti
dressing:
1 ½ tbsp soy sauce
1 ½ tbsp white wine vinegar
1 ½ tbsp olive oil
1 ½ tbsp agave
1 ½ tbsp roasted sesame seeds
also:
½ cucumber, cut into noodles
1 spring onion finely chopped
optional: a sprinkle of chili flakes
#1.5 Tonkatsu Tofu Toasts 2:10
4 slices of bread
spread of choice: hummus, vg cream cheese, mashed avocado, miso butter
tofu from recipe #1
dressing from recipe #1
1 medium cucumber, cut into noodles (serve whatever doesn’t fit on the toasts on the side)

for the tofu:
2-3 spring onions, chopped
250g firm plain tofu (8.8oz)
2-3 tbsp unsweetened soy yogurt
1 ½ tbsp lemon/lime juice or 1 tbsp white wine vinegar
1 tbsp olive oil
1 ½ tsp tikka spice mix*
for the sauce:
1 tbsp olive oil
2 small red onions
2-3 cloves garlic
1 inch piece of ginger
1 tsp tikka spice mix*
2 cups crushed tomatoes (500ml)
½ cup (125ml) veg broth or water, if sauce gets too thick add more
1 can coconut milk (400g = 14oz) OR 1 cup (250ml) soy cream plus ½ cup (125ml) water
generous pinch of salt, to taste
1 tsp cornstarch PLUS 3 tbsp water
1-2 handfuls fresh cilantro
1-2 tbsp lemon juice, or to taste
Make your own spice mix by combining 1 tsp each:
* Coriander
* Paprika
* Cumin
* Chili powder
* Turmeric
* Black pepper
And a dash of:
*Cinnamon
*Nutmeg
* Cardamom
→ only use the amount needed in this recipe! use the rest for future cooking!
#3 Homemade Fresh Pasta 5:05
90g all purpose flour
15g (2 tbsp) semolina (Hartweizengrieß in German) → or sub w 2 tbsp more flour
¼ tsp salt
3 tbsp water, add 1-2 tsp more while kneading IF NEEDED
1 tbsp olive oil, plus 1-2 tsp more for greasing your hands while kneading
salted water to bring up to a boil
3-4 heaping tbsp ready made tomato sauce
1 tbsp ready made hummus
1-2 handfuls fresh spinach
optional: spring onion, sesame seeds

#4 Healthy Fast Food Wrap 8:47
1 small head cauliflower
2 potatoes
1 drizzle of olive oil
3-4 cloves garlic, unpeeled
generous pinch of salt
sprinkle of spices of choice
→ yields enough veggies for 4 wraps
for the mayo:
2 tbsp vegan mayo
3-4 cloves roasted garlic, peeled
per wrap:
tortilla of choice
tomato slices
iceberg lettuce
homemade garlic mayo
red onion rings,

sesame seeds
the roasted veggies
#5 Sweet Green Inspired Teriyaki Bowl 10:52
1 sweet potato, peeled
1 drizzle of olive oil
pinch of salt
sprinkle of spices of choice
for the sauce:
3 tbsp light soy sauce or tamari
1 ½ agave syrup
2 tbsp balsamic vinegar
1 tsp sesame or flax oil (optional)
1 tsp minced garlic
1 tsp minced ginger
1 tsp cornstarch PLUS 3 tbsp water (if needed more water)
*Feel free to make twice as much sauce and keep in fridge for up to 4 days!
