You should probably specify what parts of the plant are inedible. If I remember right dandelion stems are inedible and the rest of the plant is fine, but don't quote me on that.

The stems may not taste great but I believe they are edible and have medicinal benefits. If you open them up there's a cream inside like aloe vera you can rub on sunburns I think
