Cool the Milk: • Allow the milk to cool to about 110°F (43°C). You can speed up this process by placing the saucepan in a cold water bath. 3. Add Yogurt Starter: • In a separate bowl, mix 2 tablespoons of plain yogurt with a small amount of the warm milk to create a smooth paste. 4. Combine Starter with Milk: • Add the yogurt-milk mixture back into the saucepan with the rest of the warm milk. Stir well to ensure even distribution. 5. Keep Warm: • Place the container in a warm, draft-free place. You can use an oven with the light on, a turned-off oven with the pilot light on, or a warm spot in your kitchen. 6. Wait for Fermentation: • Allow the mixture to sit undisturbed for 6-12 hours. The longer it sits, the tangier the yogurt will become. 7. Check for Set: • After the incubation period, check if the yogurt has set. It should be thickened and have a tangy taste. If it’s not set, you can leave it for a few more hours. 8. Refrigerate: • Once the yogurt has set to your liking, refrigerate it. It will continue to firm up as it cools. Homemade Granola • 2 cups old-fashioned oats • 1/2 cup sliced almonds • 1/4 cup pure maple syrup • 1/4 cup vegetable oil (you can use coconut oil for a richer flavor) • Pinch of salt Instructions: 1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper or lightly grease it. 2. In a mixing bowl, combine the oats and sliced almonds. 3. In a separate bowl, mix together the maple syrup, vegetable oil, vanilla extract (if using), and a pinch of salt. 4. Pour the liquid mixture over the oats and almonds. Stir well to ensure everything is evenly coated. 5. Spread the mixture onto the prepared baking sheet in an even layer. 6. Bake in the preheated oven for about 20-25 minutes, or until the granola turns golden brown. Be sure to stir the granola every 10 minutes to ensure even cooking. 7. Southern Biscuits • 2 cups all-purpose flour • 2 1/2 teaspoons baking powder • 1/2 teaspoon baking soda • 1/2 teaspoon salt • 8 tablespoons (1/2 cup) cold unsalted butter, cut into small cubes • 3/4 cup buttermilk (or make your own by adding 1 tablespoon of white vinegar or lemon juice to 3/4 cup of milk) Instructions: 1. Preheat your oven to 450°F (230°C). 2. In a large mixing bowl, combine the flour, baking powder, baking soda, and salt. Mix them together. 3. Add the cold butter cubes to the dry ingredients. Use a pastry cutter, two knives, or your fingertips to cut the butter into the flour mixture until it resembles coarse crumbs. 4. Make a well in the center of the mixture, and pour in the buttermilk. Stir until just combined, being careful not to overmix. The dough will be slightly sticky. 5. Turn the dough out onto a floured surface and gently knead it a few times until it comes together. Do not over-knead. 6. Roll out biscuits. Place them on a baking sheet lined with parchment paper. 7. Bake in the preheated oven for 10-12 minutes or until the biscuits are golden brown on top. Gravy 1/2 C flour 1 1/2 C milk 1 TBS grease Heat grease in pan. Combine flour and milk and whisk away all clumps. Pour flour/milk into pan and stir until thickened. Season with salt and pepper to taste. Lentil & Smoked Sausage Stew 1 pkg smoked sausage 1/4 onion, chopped 1/4 bell pepper, chopped 1 can lentils 1 can carrots, undrained 1 tsp salt 1 tsp Italian seasoning Cook smoked sausage, onions and peppers until onions are translucent. Combine all ingredients in soup pot and allow to simmer for 30 minutes or more. Easy Pizza Crust • 2 1/4 teaspoons (1 packet) active dry yeast • 1 teaspoon sugar • 3/4 cup warm water • 2 cups all-purpose flour • 1 teaspoon salt • 1 tablespoon olive oil Instructions: 1. In a small bowl, combine the warm water, sugar, and yeast. Let it sit for about 5-10 minutes, or until it becomes frothy. 2. In a separate large mixing bowl, combine the flour and salt. 3. Pour the yeast mixture and olive oil into the flour mixture. 4. Stir everything together until a dough forms. You can also knead it a bit on a floured surface to make it smoother. 5. Form the dough into a ball and place it in a greased bowl. Cover the bowl with a clean kitchen towel and let it rise in a warm place for about 1-2 hours, or until it has doubled in size. 6. Preheat your oven to 475°F (245°C) while the dough is rising. If you have a pizza stone, place it in the oven during preheating. 7. Once the dough has risen, punch it down to remove excess air. 8. On a floured surface, roll out the dough to your desired pizza crust thickness. You can make one large pizza or divide the dough to make smaller ones. 9. If you’re using a pizza stone, carefully transfer the rolled-out dough onto a piece of parchment paper. If not, you can place it on a greased pizza pan or baking sheet. 10. Add your favorite pizza toppings. 11. Bake the pizza in the preheated oven for 12-15 minutes or until the crust is golden and the toppings are cooked to your liking. 12. Remove the pizza from the oven, let it cool for a minute, then slice and enjoy! Pizza sauce 8 oz tomato sauce 1 TBS olive oil 1 tsp sugar 1 TBS Italian seasoning Combine all ingredients well. Spread onto homemade pizza dough and top with favorite toppings. Tex Max Quinoa Chili 1 C quinoa, cooked 1 large can diced tomatoes 1 can corn, undrained 1 TBS cumin 1 TBS chili powder 1 tsp onion powder 1 tsp salt Combine all ingredients. Allow to simmer 30 or more minutes. Serve with cheese and sour cream. Hearty Cabbage Soup 1 lb. ground turkey 1/4 diced onion 1/4 diced green pepper 1 qt. hot water 1 (15-oz.) can tomatoes with liquid 1 (15-oz.) can red kidney beans, drained ¼ tsp. black pepper ⅛ tsp. salt ½ tsp. sugar 1 C tomato sauce ½ head cabbage, hand cut into 1-inch squares Brown beef in a large heavy saucepan or Dutch oven, breaking it into dime-size pieces as it cooks. When meat is brown, place in colander and drain off all grease. Rinse saucepan with water. Return meat to pan and add all other ingredients, except cabbage. Stir to mix well, then add cabbage. Bring to rolling boil, reduce heat and simmer about 20 minutes. Italian Stuffed Cabbage Rolls • 1 head of cabbage • 1 pound ground beef or chicken • 1 cup cooked rice • 1 tsp onion powder • 1 can (15 oz) tomato sauce • 1 can (14.5 oz) diced tomatoes • 1 teaspoon salt • 1/2 teaspoon pepper • 1/2 teaspoon dried oregano • 1 TBS sugar • 1 TBS olive oil • 1/2 C water Instructions: 1. Preheat your oven to 350°F (175°C). 2. Bring a large pot of water to a boil. Carefully remove the core from the cabbage, then blanch the whole head of cabbage in the boiling water for about 2-3 minutes. This will help you easily remove the leaves. Gently peel off 12-15 large cabbage leaves and set them aside. You can also separate the leaves and blanch them separately. 3. In a large mixing bowl, combine the ground beef or chicken, cooked rice, onion powder, salt, and pepper. Mix well. 4. Place a portion of the meat mixture onto each cabbage leaf. Roll up the leaf, tucking in the sides as you go, to create a cabbage roll. 5. In a separate bowl, mix together the tomato sauce, diced tomatoes, salt, olive oil, sugar, oregano, and water. 6. Pour the tomato sauce mixture over the cabbage. 7. Bake 60 to 90 mins at 350. Spinach, Sausage & Cheese Quiche • 6 large eggs • 1 cup milk • 1 1/2 cups shredded cheese • 2 cups spinach, thawed and dried • 1/4 onion, finely chopped • Salt and pepper, to taste • 1 tablespoon butter or cooking oil Instructions: 1. Preheat your oven to 350°F (190°C). 2. In a skillet, heat the butter or cooking oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 3-5 minutes. 3. Add the chopped spinach to the skillet and sauté for another 2-3 minutes. Remove from heat. 4. In a mixing bowl, whisk together the eggs, milk, salt, and pepper. 5. Spread the sautéed spinach and onion mixture evenly in a greased 9x9-inch baking dish. 6. Sprinkle the shredded cheese over the spinach and onion. 7. Gently pour the egg mixture over the spinach and cheese. 8. Place the baking dish in the preheated oven and bake for about 30-35 minutes or until the quiche is set and the top is lightly golden. 9. Allow the quiche to cool for a few minutes before slicing and serving.

I found that it is easier to get the family to eat “cabbage casserole” then cabbage rolls. I just shred up the cabbage and mix it all together. It’s all the same thing but they eat it that way. Thanks for great recipes.

I always have these 20 pound containers with a handle on them and I keep 2 for flour, sugar 1 for beans and rice when they get low I refill them. I also keep a variety of pasta and I do keep some canned goods but because I have allergies to cans i am trying to home can a good bit of our food great menu plan. Thank you Lori for all you do!

You give us such great ideas! Feeding a family is not easy in this day and time. I keep a well stocked pantry so I usually have extra staples like canned tomatoes. I cook for myself only. Showing cooking on a budget is such a needed skill. My mother had a friend she had 5 children and like you cooked on a budget. She made the best meals. I remember her breakfasts in the morning b4 school. My mother didn't cook breakfast.

I'm so excited to try making yogurt! On granola, I like peanut butter so I mix that in as an oil. I've also stirred in protein powder. Every batch can be different! I love that your recipes can be downsized for us empty-nesters!

I make lots of vegetable soup. I can make biscuits but i do not do it often. I also make homemade English muffins so i can make breakfast freezer sandwiches. We make homemade pizza. The yogurt looks good, i use it on place of sour cream. I love oatmeal, with fruit or without i simply love it. I love lentils and make a lentil vegetable soup that i carry to work for lunches. It does keep you full. I get dry lentils at Walmart or the dollar tree. I would definitely eat your soup. If i changed anything it would be add 1 or 2 spoons of brown sugar to cut down on the acid from tomatoes. I make mine without the meat, add in mushrooms, chopped celery, grated carrots, and the Italian seasonings. I love quinoa too. Hot or cold. Panera bread uses it as a base for salad but mix it with a blend rice, the whole grain rice like brown and long grain. When I make tacos I stretch the beef by adding in a can of black beans to the hamburger meat along with onion and peppers. That is a way to make the meat really stretch, I do make my own taco seasonongs to help control the salt content. I do make sausage gravy but i don't care for it, my family loves it. I would have eaten a bowl of grits with eggs instead. Potato soup is something else i make with the use of small pieces of ham or bacon for garnish for those who want it. Everything looks wonderful to me. Thanks for sharing.

Spinach is great in the lentil soup. Bagged spinach is good but frozen would be fine. I forgot my bagged spinach was on marked down. (BTW, as soon as me and my husband watched your channel we were in love-BIG love from our part of TN)

You have nice content! So many youtube cook and recipe creators tell people to save their vegetable scraps and add it to soups. NO!! If these are scraps from vegetables from you garden that you did not spray with harmful pesticides, yes save and add those. If you are buying regular/standard vegetables from the grocery store, (not organic), you don't want to add those to your soups, etc. The outside of those vegetables are covered with pesticides and can add dangerous toxins to your soups. Beware of what you are teaching. ❤

I make vegan yogurt with 1/2 cup raw cashews, I cup water, 1/4 cup yogurt from my last batch, and one package of room temperature silken tofu. Just blend it until smooth, put it into mason jars with the lids on loosely, and I put them in the microwave (don’t turn it on!) to sit until it’s as sour as you like. You can do it in the oven with the light on too.

When I make pizza dough I roll it it to the shape of the pan and immediately place it on the oiled pan and let it sit a bit. It rises a bit more. I dont sauce and top the dough until the grill or oven is hot and ready. The crust doesnt get soggy and no mishaps!

Although I cook for only 1, I am always looking for frugal yet tasty, interesting meals. Because, if a meal or ingredients are not really tasty I find it is difficult to use up. And money is wasted. I made Blueberry Oatmeal Bars the other day using up a small package of leftover Walnuts as well as a bag of Blyeberries. I will freeze the leftover bars for future snacks. I purchase alot of my meats on clearance and found 4 packages of 4 Sausages each for $2.99, Alfresco brand. One sausage is 1 portion and comes out to be $.75. Can not beat that price for protein ! They are Chicken Brown Sugar and can be used in so many meals. You are inspiring me to try in November to keep to a $25/ week food budget. Wish me luck !

I so enjoy your soothing and calming presentations in your videos! Keep 'em coming!! Your tips are spot on. I'm glad you're sharing them with an audience that can benefit from them because THEY WORK! I use almost all of them but stopped making yogurt when milk prices made it cost efficient to buy yogurt. I should return to homemade now that prices have come down a little. Do you have more ideas on stretching meals such as your smoked sausage lentil soup idea as soup one night, a rice bowl the next night? Love the zero food waste too in using onion skins and carrot peels for veg broth. I'll use scraps a 2nd time if they still look like they have life left in them!!! I use the fat congealed when making chicken broth as my fat for cooking like some use bacon fat. I carefully ladle it into an air tight container and it keeps for quite some time. It's especially great when I saute vegs to start my stews and soups. Anyway, keep up the good work!

Plant based milk yes……ONLY soy milk with no additives. West soy makes aseptic cartons you can buy at Walmart for 5$ for two quarts, and it’s organic. I use high quality probiotic capsules (five) for the first batch…..you must cool the milk down to 110° (approx) before adding the probiotics. Then after that you can use half cup of the yogurt. So, I figured it out, homemade organic is 8 cents an ounce (not including the probiotic) and regular premade NON organic is about 28 or 29 cents an ounce. I add my own sweetener and fruit. And there’s no gums or fillers.

For those that would like a thicker crust you don't need to have a thicker dough. Just let it rise again after you have it all stretched out in the pan before you put the sauce on.
