7 Grain Bread

Gluten and Lactose Free
Ingredients:
150g rice flour
40g potato starch
30g of corn starch
70g of sweet flour
30g of sugar
10g of organic yeast
5g of chemical yeast
6g xanthan gum
4g of agar agar
½ teaspoon salt
40ml of olive oil
3 eggs
½ teaspoon of apple cider vinegar
140 ml warm water
⅓ cup of seed mix (chia, white and black sesame, sunflower seed, flaxseed, poppy and pumpkin) to put in the dough.
¼ cup seed mix (same) for garnish
Method of preparation:
👉🏻Step 1
Yeast sponge Remove from the dough:
10g of organic yeast
1 tbsp rice flour (take from the recipe total)
1 tbsp sugar (I used yellow) - (take it from the recipe total)
30ml of warm water - (take from the recipe total)
Mix and set aside for about 5 minutes
Reserve

3 eggs - beat to foam (reserve)
👉🏻Step 3
6g xanthan gum
40ml of olive oil
Mix well (set aside)
👉🏻Step 4
Mix of flours and dough
In a bowl, add:
150g rice flour
40g potato starch
30g of corn starch
70g of sweet flour
30g of sugar
5g of chemical yeast
4g of agar agar
½ teaspoon of salt - 2g
Mix well so that all the flours are homogeneous.
Add:
Step 1: yeast sponge
Step 2: beaten eggs
Step 3: Olive Oil with Xanthan Gum
½ teaspoon of apple cider vinegar
110 ml of warm water gradually. Remember that the important thing here is the dough point. In total with the 30 ml of the sponge, there were 140 ml.
You can hit it by hand or take it to the mixer.
Add ⅓ cup of seed mix to dough and knead a little more just to mix.
Texture: Firm, consistent and does not spread in shape.
Transfer the dough to a greased and rice flour-dusted tin (11 x 25 x 7cm)
Model with the help of a wet tablespoon
Garnish with ¼ seed mix
Cover and let rise for 30 minutes or until your bread comes close to the edge of the pan.
I make my microwave oven. I heat up a mug of water and when it turns off, I put my bread to ferment in this humid heat.
Preheat the oven to 200ºC
Bake at 200°C for 30 - 40 minutes. This will depend on the power of your oven. Pay attention to the aroma, appearance and the toothpick test.

let it cool a little
Peel the bread off the walls of the pan using a spatula.
unmold
Let cool on a rack
After cooling you can serve
