This ham started its curing life on the 30th January 2016 and has spent 28 days on salt and then the remaining time drying and maturing.
This video shows me taking the very first slices from this vintage prosciutto. The aroma from this ham is reminiscent of a mature stilton cheese.
The slices are very dry and resemble more of a pork jerky than what one would normally consider a softer ham sliced from say a three year matured prosciutto.
