I used to buy veggies and keep them with their original packaging in the refrigerator. It will be quite messy with everything squished into the chiller drawer together and some will be in other parts of the refrigerator. There were occasions where I simply didn't 'see' the veggie stuffed in that corner or just forgot that I bought it because it was not right in front of my lazy eye.
With the rising costs of veggies, especially organic ones, throwing away wilted veggies just because you forgot to eat them on time is such a waste of money. Sometimes, it's not because I forgot, it's simply because I didn't plan well what I was going to eat and didn't get to eat them on time and they had wilted by the time I came to get them :(
I had this light bulb moment in March 2023 when I was deciding what to do with all the plastic takeaway boxes I got from in laws' home. I could either put them into the recycling bin or reuse them. I decided to treat veggies like a meal prep, by washing all that I bought for the entire week and then portioning them so that I can just take out 1-2 boxes to eat raw or cook them without much hassle. So washing is one time pain for the entire week and I would have boxes and boxes of veggies that I could clearly see and be able to plan when I would eat each box for lunch and dinner. By end of each week, I would pat myself on the back for finishing the last box of veggie.
This method of storing veggies like a meal prep is very effective. Before this I used to only eat veggies during dinner because I was too lazy to wash them for lunch. With each veggie stored in a box, I find that I am more inclined to grab a box and include it as part of my lunch as they are already washed. So it's not a hassle at all. At the end of the day, eating veggies both lunch and dinner means I am getting more veggies into my body than before!
