I am not vegan/vegetarian, but I eat around 2kg of vegetable and fruit per day. When I switched to eating more veggies, I had problems with gas and bloating, but my body get used to it after a while. Now I dont have any problem even if I eat more problematic veggies like cauliflower, broccoli, cabbage in a huge amount.

That's awesome, so good! I always give the analogy of working out - like going to the gym the first time - it can take some time to adjust. But after we adjust we get all the benefits of eating lots of incredibly healthy food!

So good! I don't personally track fibre but I reckon it must be similar haha!
