It always amazes me how much food they (restaurant chefs/cooks like these) can prep at once. Like the batter for the katsu, the huge wok of rice or the sauce. All with little to no spillage. Impressive.

As a chef, I used to like to say that half of our job was moving food product from one container to another. Whether from the pot to a container to cool it, then into the proper storage container, then into whatever used on the line for service, then into a smaller container in the walk-in when it’s only half full now….sometimes into squeeze bottles for certain sauces, usually pouring from a very large full container into a very small one. Lots of practice without spilling

per dish, it's much easier to cook large batches because it doesn't require as much precision. also, they can cook large batches because of the volume which ALSO is increased by small menus. The japanese people can appreciate small menu's because of the monocultural system

He pours that huge saucepan out into those smaller containers so expertly, I didn't see a splash or drop fall on the floor! If that would have been mee that sauce would have ended up in my shoes LOLS

He puts all he's got into doing it right. He's very dedicated to his job no that's not correct there's a big difference,he enjoys what he does and he does it with soul. I'll give you a high 10 great job😎

It’s common in Japanese restaurant to have 2-5 very small portions of different sides. I once got like 20g of potato salad. In the USA, a portion that small would be an insult but that’s why we’re all fat.

It looks amazing that the chef and staffs prepare for the huge amount of dishes! After the pandemic's end, I will definitely visit there and enjoy the chicken katsu with a glass of refreshing beer!

If you watch the other video these katsu are not made from whole breasts but sliced and butterflied so there is a lot of breading. Still delicious though. I've made the ultrathin ultrabig pork katsu as sold near Tokyo U. Called 'newspaper katsu' for their size.

I overate in Germany just like this. Fried pork cutlets with potato and some kind of slaw. It was great, and it ruined me too.
