Located in Kyoto's Omiya district, 'Tsubomi' is a cozy flour-based food shop converted from a fishing tackle store, boasting a unique, stall-like ambiance. Their popular Negiyaki, meticulously grilled for nearly an hour to enhance the savory flavor of green onions, draws not only locals but also international visitors. On the day of my visit, the shop was nearly full. Regulars often order beer while waiting, enjoying Takoyaki and observing the careful grilling process. The evening meal amidst Kyoto's cityscape was delightful. The proprietor mentioned that the shop can get quite warm in summer due to the lack of air conditioning.
