📚 Poke Tacos
Ingredients:
For the spicy ‘ahi poke
¼ cup kewpie mayonnaise amzn.to/3C1ycDM
2 tablespoons sriracha amzn.to/3J7jYFF
1 teaspoon shoyu amzn.to/3VFNBSN
1/2 teaspoon sesame oil amzn.to/3C6v2iC
1 pound sashimi grade ‘ahi
2 teaspoons thinly sliced green onion
For the taco shells
12 wonton wrappers
1 quart vegetable oil amzn.to/3MrxZAg
For the avocado crema
2 avocados, pitted and diced
¼ cup cilantro, roughly chopped
¼ cup sour cream
Juice of 2 limes
2 cloves garlic, minced
Directions:
For the spicy ‘ahi poke
1. To a small bowl add mayonnaise, sriracha, shoyu, and sesame oil. Mix until well combined and set aside.
2. Next slice the ‘ahi into small cubes about 3/4 inch thick.
Place ahi cubes in a bowl and add the spicy mayo mixture along with the green onion. Gently toss to coat.
3. Store in the refrigerator and ENJOY!
For the taco shells
1. Heat a small pot of oil over medium high heat to 350F. While the oil is heating up start cutting the wonton wrappers.
2. Using a round cookie cutter, cut the wonton wrappers into a circle shape.
3. Place the wonton wrappers into the oil and fry for 30 seconds to a minute or until golden brown.
4. Remove from the oil and place on a cooling rack set over a cookie sheet or on a paper towel to drain excess oil.
For the avocado crema
1. To a blender, add avocados, cilantro, sour cream, lime juice, and garlic. Blend until smooth and creamy.
To assemble
1. Use the wonton wrapper as a taco shell. Add ‘ahi and top with avocado crema. Optionally top with extra furikake and green onions. ENJOY!
