Recipe - serves 4-5
Veggie Fritter Ingredients:
6 oz (or half bag) of frozen peas, thawed
1 broccoli crown
1 zucchini
2 stalks of green onion
2 eggs
1/2 tsp cumin
1 tsp kosher salt
1 cup shredded cheese (southwest or mexican blend)
2/3 cup all purpose flour (adjust up/down if you are using different vegetables)
1/2 tsp garlic powder (optional but I usually add this in but forgot in the video)
vegetable oil for pan frying
Instructions:
In a large mixing bowl, slightly mash peas with fork or potato masher and set aside. Cut broccoli crown and zucchini and add to the food processor until texture is in small to fine pieces. Add broccoli and zucchini to the large mixing bowl with the peas. Chop 2 stalks of green onion and add to the bowl. Add 2 eggs, salt, cumin, garlic powder and cheese to the vegetable mixture. Add flour and mix together until mixture can stay together on the spoon.
Heat a large frying pan on medium high heat. Add vegetable oil just enough to coat the bottom of the pan. Once the pan and oil is hot, add a heaping spoonful of veggie mixture to the pan and press the spoon down on the mixture to 1/4 inch thickness. Flip once the fritter once the bottom side is brown.
Tip: I usually fry one fritter first to taste as this is a good time to add more salt (or flour-if the fritter is not staying together) before frying the remaining fritters.
***Veggie fritters can be eaten as is or topped with hot sauce, salsa, guacamole, garlic aioli, etc.
Optional Topping as shown in video: Sliced Avocado and Pico De Gallo
Pico de gallo (this can be made in advance)
Ingredients:
2 large tomatoes, diced
1/2 medium onion, chopped
1 jalapeno, finely chopped
1-2 garlic cloves, minced
2 tbs cilantro, chopped
1 lime
Instructions: Dice tomatoes and chop remaining vegetables (garlic should be minced) as indicated above and add to a medium bowl. Cut 1 lime and squeeze the lime juice into the mixture. Add salt to taste and stir until all ingredients are incorporated evenly. Refrigerate until served.
Other Notes/Tips:
-Veggie fritters freeze well and can be reheated in the air fryer or oven.
-Substitute and use other veggies like carrots, asparagus, cauliflower, bell peppers, etc
-Alternate Seasoning Options - Go Italian style and use an italian spice blend and serve fritter with sliced tomato, italian basil, and fresh mozzarella with balsamic vinegar (a play on caprese salad).
-Breakfast Option - add fried egg on top of fritters and serve with hash browns.
