Hiyakake Somen
Hello everyone.
I’ll make Japanese cold noodles this time.
Hiyakake means “poured cold soup”.
Somen is the thinnest noodles in Japan.
We often eat it in hot summer season.
Let’s cook together !!
Ingredients
・2 eggplants
・6 okra
・2 sticks green onion
・10g ginger
・600cc water
・7g Konbu
・30g Katsuobushi
・40cc Usukuchi soy sauce
・30cc Mirin
・5~6 dunble somen noodles
・Bonite flakes ( for topping)
・Appropriate oil
Recipe
・First, water put in the pot.
Add konbu into the pot.
Then let it sit for 30 minutes.
・Grate the ginger.
Cut the green onion.
・Boil the okra for 1 minute, then okra remove from the pot and into cold water.
Cut the okra into half.
・Cut the eggplant into 1/8.
Oil into the heated the pan.
Cook the eggplant over medium heat.
・Put cooked eggplant and boiled okra in the container.
・Let’s start making Dashi soup.
Boil water and konbu.
・After boiled, remove konbu.
・Add katsuobushi and boil.
・Strain with a sieve and paper.
・Dashi into the pot again, and heat it.
Add Usukuchi soy sauce and mirin, then boil.
・Pour a little Dashi soup over the eggplant and okra.
・Place veggies and Dashi soup in the fridge to cool.
・Boil somen noodles .
Please check boiling time.
・Rinse the somen noodles with water.
Then, cold throughly somen noodles with cold water.
・Serve in a bowl.
