Ingredients for Butternut Squash Soup:
2 Tbsp Extra Virgin Olive Oil.
1 Large Yellow Onion, Chopped.
1/2 Tsp Salt.
1 (3 Pound) Butternut Squash, peeled, seeded, cleaned and cubed.
3 Garlic Cloves, Crushed.
1 Tbsp Chopped Fresh Sage.
1/2 Tbsp Fresh Rosemary, Minced.
1 Tsp Grated Fresh Ginger.
3-4 Cups Vegetable Broth.
Fresh Ground Black Pepper.
For the Toasted Pipits (Pumpkin Seeds):
3/4 Cup Raw Pumpkin Seeds.
1 Tbsp Olive Oil.
1/2 Kosher Salt.
1/4 Tsp Each, Garlic Powder, Onion Powder, Paprika, and Black Pepper.
