Most vegetables benefit from being salted LAST, but especially ones with a higher water content. If you’ve ever made eggplant parm from scratch and had to “sweat” your eggplant before breading, than you understand why salting last can make a big difference. Salt draws out water which can be used to your advantage to tenderize your eggplant, or work against you and make your zucchini soggy. :)

I salted a cheap piece of choice sirloin for two hours before I pan seared it and she turned out beautiful. You salt like a mad Woman all over then rinse really well and dry really well. No need to add additional salt. 👍🏻🤷🏼♀️ I’m going to grab zucchini at the Farmers Market. 😊👍🏻

It’s the same for basically everything you cook that you want to get crispy. When you cook an egg, or scrambled eggs, you add the salt after so it doesn’t get all watery.

Try this Italian way, and you will not regret: Slice the zucchini in thin rounds, fry without salting, dry, put them in a salad dish, add micro cut garlic, fresh parsley, salt and brown sweet vinegar.. it is like peanuts, you could not stop eating it!! Buon Appetito

The Greek way is to make horizontal slices, salt, powder with flour and deep-fry in olive oil or sunflower oil. You can always add the salt after frying them and don't forget to add some oregano after plating them! Καλή όρεξη!

As an Indian, who's household uses ghee frequently, I am telling you.... Ghee can enhance every.single.flavour I made a protein bar using sunflower seeds, flax seeds, melon seeds, pumpkin seeds, dry toasted them Added almonds, walnuts, cashews and pistachios all toasted in ghee Added blended dates fried in ghee as a binding mixture And the protein bars were just awesome

For those wondering, the reason it won't get a crust if you salt too soon is because browning happens at around 280-330°F, which is easily achievable when food is in direct contact with flame, a pan, fats, or even hot air. When salt is added, water is drawn out through osmosis, and that liquid water *cannot* reach a temperature higher than 212°F/100°C! If you add more heat energy to liquid water once it's at the boiling point, all of that energy goes into turning it into a gas, instead of raising its temperature. The water pulled out forms an interface between the fat and the vegetable, sucking up all the energy that could be going to heating the vegetable's outsides and using it to vaporize instead. Additionally, with something containing a lot of water, like vegetables, even as the water boils off, the boiling heat is enough to break cells and release more water. This cell rupturing also changes the interior texture, making it gummy and soggy inside.

I’m veg keto and I slice my zucchini in strips with a mandolin & then liberally salt. Let sit, then drain the water out. Then I toss in avacado oil, red pepper and fresh garlic. Let marinate. Then I lay it on baking paper on a cooking sheet & put it in the oven on 450 til parts are starting to just brown. Usually less then 10 mins. I use the zucchini as lasagne noodle and layer with Rao sauce, a seasoned ricotta mix and mozzarella. Super yummy and healthy zucchini lasagne. I also sometimes make a keto Mornay sauce and make an omelette with my zucchini strips, a good cheese and a drizzle of the mornay.

Sometimes I add a sprinkle of Italian seasoning mix (like Good Seasons), too. We grow a lot of zucchini every year and there's nothing better than grabbing one out of the garden and cooking it right away!

Yes, this is how to cook zucchini! I can’t stand zucchini cooked with tomatoes as it just steams and gets soggy. I cook it like this, but I usually just cut into rounds so that it’s easier to flip. A great recipe is this with chick peas and onions (both of which are also sautéed but I sauté each item separately). Then toss everything with linguine and Parmesan. Add salt and pepper to taste, and a little pasta water if you like. It’s delicious!

I feed 5 or more people a day. Here's my recipe. 2 zucchini 2 small yellow sqash 2 small or 1 big onion 1/2 stick butter 2T olive oil Cut veggies like you did, Cook on medium heat til veggies are browned to your liking. Add cherry tomatoes and seasonings towards end of cooking time. The flavor is amazing, there is never any left, please try it and let me know if you like this😊

I do stuffed zucchini. Let them grow huge, cut them in half, scoop out the seeds, cover in olive oil salt and pepper, oven at 350 for 10 min, fill with a mix of corn beef hash mozzerella cheddar and chopped onions, and back in oven for 35-45min. Add mozzerella on top for the last 10 minutes till brown. Very good.

You can also bread with panko or Italian seasoning and throw in the air fryer or oven until crispy-- or saute with breading. I like to add a little parm to the breading for extra crispy action & extra umami! Dip in some marinara- yum

I have an advice for you and for all of those who is reading this comment : Once the salt is cooked, its iron structure changes and so it becomes easier for the body to absorb. In case of uncooked salt, the absorption is slightly slower, further causing high blood pressure or hypertension. Keep this thing in mind .

Roasted/grilled zucchini seasoned with clubhouse vegetable seasoning, s+p, snd olive oil is my go to. Can also roast it with bell peppers, mushrooms and red onion. Best way to have veg imo

But I def love zucchini 🤩, I grill it, fry it, bread it, I love just cooking it until a bit soft and adding it to pasta dishes or omelettes...but, to be fair, veggies are probably my favorite food group, so it's about a ten way tie for "favorite" 🤤

If you dont have ghee, just add some butter on medium-low heat make it bubble slightly once you get clear golden liquid thats ghee! If you went overboard and it looks brownish then thats burnt butter/burnt ghee which is even more tastier than ghee 😅 Instant without having ti go through the process of making ghee.

Add some short grain rice and water to make a zucchini soup vvvvery good comfort food you can substitute the ghee with butter too .. my mom used to make it for me when i got sick❤️
