Your bacon is what we call fat back usually here in the US - our bacon is often called streaky bacon elsewhere and is marbled with streaks of meat. Many younger people are only familiar with bacon pre-sliced, but yours took me back to my childhood, when we bought great slabs of bacon and sliced it off the rind just as you did yours. Once the bacon was finished, my mom would use the rind to flavor our next pot of beans. This bread looks very tasty, thank you for showing us!

We put ours in fish chowder, fry it with onions then add potatoes and fish, then milk and a little water.

For people who have no access to fresh yeast like used in this video; the conversion is 30g fresh yeast is replaced by 15g of active dry yeast or 7g of instant yeast. Or in US units, 1 ounce fresh is replaced by 1/2 ounce active dry or 1/4 ounce instant dry.

I’m from a small village in Iceland and I have no access to fresh yeast being used in this “Icelandic small village” recipe. Nor have I ever seen anything like this in Iceland. 🤷🏼♀️

Also, I have never come across a block of smoked bacon like that anywhere in Iceland. Perhaps it is sold at some specialty butcher in Reykjavík (although I’ve never seen it) but a small country village store will carry only the typical very thin sliced bacon. I am really curious to know which small village in Iceland this is supposed to be from…

Looks good, here in Louisiana we call this type bacon fatback or salt pork. Soak the salt pork in warm water to take out most of the salt. I did this with all fats from the salt pork, used about 1/3 of what fried. Used rest next morning to make white bacon gravy with biscuits.

Looks so delicious! Attention translators:That is not smoked bacon in English. That cut of pig is called "fat back". Bacon is the long strip that has meat marbled through it. Canadian bacon is the cut that is circular with a small amount of fat around the edges. Thanks for the video🤗

I am in Au... originally from Macedonia... and today was thinking of going into specialize store to buy same cracklings as it's winter here What a coincidence 🤗 However in our culture we consider that lard softens the internal organs and give some relief. In the case of cold or chest coughing we worm spoon of lard and small amount of grappa... wet some wool peace of material in the worm mix and apply on the chest. Sleep in warm bed to sweat and have second pijamas ready.

Ok.... I am born and raised in Iceland. I have combed through recipies from over 500 years ago and I can not find anything like this. Will you please tell us your source? The women in my family were extremly traditional when it came to food so I pride myself in my collection of strange and traditional Icelandic recipies so it really bothers me that I have never even heard of this. Iceland is too small of a country for that to have been from here and no one knowing of it.

@@gabrielladelfinadiblasio7398 Garlic has been around for over a hundered years, how ever it use to be hard to obtain. As for oil, it has been around for more than a 1000 years but it was mostly made from fish liver, seals and other kinds of blubbery animals.

@@rosathor2487 well... we did actually have smoked pork for hundereds of years (we braught pigs during settlement before 1000 ac), some of wich might be very close to todays bacon. Lard from pork is also something we have had since settlement. Olive oil was known amongst our sailors and the rich but hardly obtained untill after WW2. As for garlic, we have had those for at least a 150 years, though not really grown here at first. Thanks to vikings, and later, sailors. Onions have been around for a long time and onion soup was used during the viking era to determin who got life saving medicine after battles.

Looks great, but it’s not “from Iceland” you can tell just from the ingredients. You can’t even buy fresh yeast or block smoked bacon in Iceland, we just don’t use these ingredients. I’m sure it’s delicious.

yup, we do all sorts of "scones" called "pogácsa" in Hungary and we have one very similar in terms of ingredients. Apart from the garlic flavoured lard on top we put egg white on it. However as you suspected it is delicious :D we also make it with plain butter, cabbage, cheese, etc. In fact some of these can be bought on any corner, but those are the more modern fancy versions like "pizza scone" or "cream cheese scone", "sausage scone" etc :)

In Argentina and many other latin american countries we have a similar thing called pan con chicharrón, which is basically the same thing minus the garlic butter and the onions, so just bread with fried pork fat in it and it's usually just one big loaf of it (or braided if we're feeling fancy). It's great for merienda.

I suppose a recipe may seem more appealing when it's associated with some far-away, old-timey romanticized place, like Europe for Americans, or Iceland for Europeans... That said, of course it's hard to rule out that there isn't some Islandic person somewhere who uses a recipe like this one. In a globally connected world, attributing recipes to one specific place will probably always be a bit random. 🤷♂️

In Newfoundland the fried pork is called 'scruncheons' and would be served with brewis (a soaked bread) and salt fish. I desperately want to try this now as scruncheons are just so yummy!!

Found this video today and immediately repeated this recipe. It's really delicious, but I need less salt for my taste. I would also add more sugar to give the dough a contrast of flavors. It reminded to me and to my husband of the salami pizza I often make at home. There yeast dough in milk base is very similar to this dough.

I always have a tub of lard and a bunch of garlic and onions on hand. I just need the yeast and fat back. This looks like a great breakfast bread with eggs, coffee and juice. And some fresh strawberries and peaches on the side. I'd add some shredded cheese to my bread dough.

It resembles Ukrainian pampushki that serves with borsch soup. So I guess it is for light or sour soups.

When we lived in Mexico the lady that took care of us when my mom was in her studio would buy pork fat to render for the grease for cooking. The little crunchy bit that was left was my reward for helping her.

I've made this a few times, and it's wonderful!! But... Whether I use US conversions or use ml and grams, when I mix the dough it's very dry and crumbly. I always have to add more water to get the consistency of dough in the video. Not sure what is happening with that, but once I do that, it's so darn good!! I also always have garlic confit in the fridge, so I use that for smearing on the top. Every time I make this, it disappears!! So good!!!!!!!

В эти шкварки с луком нужно варэнников с картошкой бухнуть и переколдебенить, заварить чай с душицей, добавить в чай молока и сделать его сладким сладким, сверху посолить колдыбень и наесться до отвала)

I really like the small whisk that you use, it's much more practical that what we have in the US.

But we do have a whisk like that in US. My mom had one for years. It has a name, but I don't remember what it is. She also has one that looks like the traditional whisk, but very small. I favor that one over the one used in the video.
